
This easy and flavorful Shrimp Fajitas (fajitas de camaron) recipe is sure to become a go-to family favorite!

It’s kinda like Shrimp Tacos but with a mixture of colorful bell peppers and not authentic Mexican food.
That’s right, my friends. This dish is Tex Mex at its finest even though you’ll see it served at a Mexican restaurant.
With just a few ingredients, you can have this delicious recipe on the table in no time.

Ingredients
- large shrimp – deveined, shells removed
- ground cumin
- ground oregano
- chili powder (or red pepper flakes)
- ground cayenne (optional)
- salt
- ground black pepper
- oil – olive oil, avocado oil, vegetable oil – whatever you prefer is fine.
- white onion (or swap out for red onion or yellow onion)
- garlic clove
- green pepper
- red bell pepper
- yellow bell peppers
- fresh lime juice
Swap out the protein to make Beef Fajitas or Chicken Fajitas.
Cayenne is optional. Omit if you are not interested in spicy food.
Instead of fresh onion and fresh garlic, use 1 tablespoon onion powder and 1 tablespoon garlic powder.
Instructions
- Rinse the raw shrimp and pat dry with a paper towel.
- In a large bowl, sprinkle with cumin, oregano, cayenne (if using), chili powder, salt, and pepper.
- Mix well. You want the shrimp to be completely covered.
These are large shrimp. Thawed from frozen, already deveined and peeled for faster cooking.
Fajita marinades are great, but they require time. This is an easy recipe for a quick dinner.
- In a large skillet, heat olive oil over medium high heat and add the shrimp.
- Cook for 2 minutes. Turn the shrimp with your tongs.
- Add the peppers, onion, and garlic to the hot pan.
- Cook for an additional 4-5 minutes, or until the peppers are soft.
Turn the heat off and squeeze lime juice all over the fajitas. Mix well.
Be sure to use tongs to flip the shrimp so that they cook evenly on both sides.
Sheet Pan Instructions
For an easy sheet pan dinner, line a baking sheet with aluminum foil. Toss all the ingredients together. Place them on an even layer on the sheet pan, and bake at 400 degress F for 25 minutes.
Once everything is cooked, warm flour tortillas on a hot griddle.
To assemble, add some of the juicy shrimp mixture and top of warm tortillas with a generous amount of your favorite toppings.
Storing Instructions
Store leftovers in the fridge in an airtight container for up to 5 days.
To freeze, place leftover shrimp in a sealable bag, removing as much air as possible. Store in the freezer for up to 4 months. Thaw overnight in the fridge and reheat before consuming.

- Turn heat off and squeeze the lime juice all over the shrimp and peppers.
- Stir to combine.
- Serve with tortillas, salsa, and enjoy!
