Ingredients

  • 1 lb shrimp deveined, shells removed
  • ½ tablespoon ground cumin
  • ½ teaspoon ground oregano
  • ½ teaspoon chili powder
  • ½ teaspoon ground cayenne (optional)
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoon oil
  • ½ onion sliced
  • 1 garlic clove finely minced
  • 1 green bell pepper sliced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 lime (juice)

Instructions

  • Rinse the shrimp and pat dry.
  • Season with cumin, oregano, cayenne (if using), chili powder, salt, and pepper.
  • In a large skillet, heat 2 tablespoons of olive oil.
  • Add shrimp and cook for 2 minutes.
  • With tongs, turn the shrimp.
  • Add the peppers, onion, and garlic.
  • Cook for an additional 4-5 minutes, or until the peppers are soft.
  • Turn heat off and squeeze the lime juice all over the shrimp and peppers.
  • Stir to combine.
  • Serve with tortillas, salsa, and enjoy!

Notes

Cayenne is optional. Use less or omit altogether if you are not interested in spicy food. 
Instead of fresh onion and fresh garlic, use 1 tablespoon onion powder and 1 tablespoon garlic powder. 
Sheet Pan Instructions: For an easy sheet pan dinner, line a baking sheet with aluminum foil. Toss all the ingredients together. Place them on an even layer on the sheet pan, and bake at 400 degress F for 25 minutes.
