- 1 green bell pepper thinly sliced
- 1 red bell pepper thinly sliced
- ½ fresh lime
- 2 cups cooked rice
- ¼ cup guacamole
- ¼ cup canned corn drained
- 2 tablespoon cotija cheese crumbled
- Fresh cilantro for garnish
Chipotle Sauce Ingredients
- 1 cup mayonnaise
- 3 chipotle peppers in adobo sauce finely minced
- ¼ teaspoon salt
- ½ fresh lime
Instructions
- Preheat the oven to 425°F.
