    Huevos con Jamon is a delicious and quick breakfast idea that’s perfect for when you’re on the GO! This Mexican Ham and Eggs breakfast will keep you fuller for longer. Low carb, low fat, and high protein.

    Huevos Con Jamon – This dish reminds me of my mom. She was the go, go, GO type. Always working and running around.

    Many, many mornings, she would make this for us because it fit her busy schedule.

    It’s ready in minutes. Involves very few ingredients. A TASTY and HEALTHY way to start the day.

    Drizzle on top with your favorite Mexican salsa, and breakfast is ready!

    • Eggs
    • Ham slices
    • Onion
    • Olive oil

    Only 4 ingredients to make breakfast! Hallelujah! As you can see, this recipe will come together very quickly.

    You can also add spices like ground cumin, ground oregano, garlic, or chiles like diced jalapenos or serrano peppers.

    This is one of the EASIEST Mexican breakfast recipe out there. Most of them involve a lot more work like Huevos Ahogados, Steak Huevos Rancheros, Nopales con Huevo.

    How to Make It

    • Crack eggs into a bowl.
    • Beat eggs.

    Notice how there is no salt in this recipe. That’s because the ham is salty. Add salt if you feel it needs it.

    This is also the time to add spices, if you are using them. Another great addition to this dish is CHEESE. For cheese, add at the end with the ham.

    Is scrambled eggs and ham healthy?
    Yes. Any breakfast that is full of protein like this one is good for you.

    Add some veggies or only use egg whites to make it an even healthier breakfast. Also, it’s only 165 calories!

    • Heat oil in a pan.
    • Add onion. Cook for 1 minute.
    • Add eggs to the pan.
    • Immediately add the diced ham.

    You can even make a big batch and save some for another day. Reheat and serve for an even quicker way to get the day started.

    Word to the Wise: Have all your ingredients ready. Breakfast will be ready in a snap.

    What is a typical breakfast in Mexico?
    Big breakfasts are the norm in Mexico. You’ll see Chilaquiles Verdes, Molletes, Cafe de la Olla usually served with refried beans and queso fresco.

    Cereal is also eaten in the mornings as is avena (or Mexican oatmeal)

    • Stir constantly with a spatula.
    • Do this until the eggs are fully cooked.

    Stir with your spatula for 1 minute. Keep stirring so the eggs won’t burn. Then turn off the heat.

    Even if the eggs are slightly runny, they will finish cooking in the hot pan.

    Eggs are a common ingredient used in many Mexican breakfasts like Chorizo and Egg Tostadas, Huevos Divorciados, Migas.

    Ingredients

    • 4 eggs
    • 1 tbsp olive oil
    • 1/4 onion diced
    • 4 slices ham diced

    Instructions

    • In a large bowl, beat the eggs.
    • Set aside until ready to use.
    • Heat the oil.
    • Add the onion. Cook 1 minute.
    • Add the eggs and ham.
    • Stir until fully cooked.
    • Remove from heat and serve immediately.

    Notes

    Have everything ready before starting to cook. 
    You can also add spices like ground cumin, ground oregano, paprika, or chile powder.

          So really thankful for this great ideas for this easy, sumptous easy to prepare healthy breakfast. Love this oatmeal recipe for it makes my morning alive and on the go. I could prepare it with mixed veggies bought at the supermart to make it more nutritious. Thank you

      Mmm throw in a some chopped hot peppers and I’m good to go with this! You just can’t beat a good easy egg breakfast in the morning. It really makes a big different in the day for me.

      You can’t go wrong with eggs and ham and then add a bit of onion and you have a perfect entree for brunch. In fact I enjoy this recipe so much that I could have it for lunch or dinner. Love that you use onion with it. You have a winner here.
