
Strawberry Cream Cheese Pastry – There is a bakery in Baja California Norte called El Mejor Pan de Tecate.

Rows and rows of Mexican sweet bread. This place is like no other Mexican bakery I have ever been to before.
One of my husband’s favorite treats to get is this one right here. Since the bakery is not located around the corner, I decided to recreate it at home.
And friends, it’s so easy to make. You’re going to love this recipe!

🍓 Ingredients

- Sliced strawberries
- Puff pastry sheet
- Cream cheese
- Heavy cream
- Egg yolk
- Powdered sugar
- Granulated sugar
- Vanilla extract
- Lemon juice
- Sliced almond
- Coconut milk
- White sugar
- Ice
🥣 Instructions

- Preheat the oven to 375 degrees F.
- Line a large tray with baking paper.
- Cut the puff pastry into 6 equal parts.
- Place each on a tray lined with baking paper.
- Beat the yolk and coat each piece well.
Don’t reinvent the wheel here. Use store bought puff pastry to make things easy for you.

- Sprinkle the edges with the slivered almonds and a little sugar.
- Prick the center of the dough several times with a fork.
What the pricking does is that it allows the dough around the outside of the pricked area to rise more. The center will rise as well, but just not as much.
The almonds give the pastry texture and flavor.

- Bake for 15 – 20 minutes or until golden brown.
- Remove from the oven.
See how the dough puffed up. That’s exactly what we want.
We’re only making 6, but you can cut the dough into smaller squares for miniature treats.

- Meanwhile in a medium size bowl combine strawberries, granulated sugar, and vanilla extract.
- Carefully mix so as not to break the strawberry slices.
This recipe is perfect for strawberry season! The riper, the better!
You can do this with other berries as well – blueberry, raspberries, or a combination of them all.

- In another bowl combine cream cheese, heavy cream, powdered sugar, and lemon juice.
- Mix well until the ingredients are combined.
If you are doing this before the dough is baking, be sure to place in the refrigerator.
Mexican desserts are typically not very sweet. If you feel it needs to be sweeter, add a little more sugar.

- Remove the dough from the oven and let it rest for 5 – 6 minutes.
- Then, using a spoon, press the tart in the middle to form a small hole.
- Into this hole add the cream cheese mixture about 2 Tbsp.
- Then add strawberries and sprinkle with powdered sugar.

- Do not use frozen strawberries. It’ll just end up a big soggy mess.
- Instead of using powdered sugar to make the filling, swap out for honey or maple syrup.
- Yes, you can use fat free cream cheese. Just be sure to taste the creamy filling and adjust as needed.

🫙 Storing Instructions
Make and enjoy right away. Unfortunately, these pastries do not store well. If you have some left over, place in an airtight plastic bag, and consume within the day.
