    • In a large mixing bowl, combine the sweetened condensed milk, vanilla extract, heavy cream, and mascarpone cheese.
    • Using an electric mixer on low speed, mix until the ingredients are fully combined.
    • Increase the mixer speed to high and whip the mixture until it becomes light, fluffy, and holds soft peaks.
    • Fold the mini chocolate chips into the whipped mixture using a spatula until evenly distributed.

    Ingredients

    • 24 graham crackers
    • 14 oz can sweetened condensed milk
    • 2 cup heavy cream
    • 8 oz mascarpone cheese
    • 1 cup mini chocolate chips
    • ½ teaspoon vanilla

    Instructions

    • Line a baking sheet with foil and lay out 12 graham crackers.
    • In a large mixing bowl add sweetened condensed milk, vanilla, heavy cream, and mascarpone whip ingredients with an electric mixer on low for 2-3 minutes.
    • Once your ingredients have combined, turn your mixer on high and whip for 5-8 minutes until it is nice and fluffy.
    • Fold in chocolate chips.
    • Spread the ice cream mixture across the graham crackers until a nice thick layer is even.
    • Lay 12 more graham crackers on top of the ice cream mixture and gently press down to release the air bubbles.
    • Freeze for at least three hours.
    • Once frozen you can break apart the sandwiches into 24 pieces.
    • Store is a gallon size freezer bag and enjoy!

    Notes

    • You can add any flavor you like instead of chocolate chips. Caramel, butterfinger, instant coffee, and nuts are all great additives to your ice cream.
