    Pineapple Pico de Gallo is the fruity twist your favorite Mexican dishes have been waiting for. This spicy pineapple salsa is a zesty, sweet, and spicy treat that will leave you craving more!

    Pineapple Pico de Gallo is a tropical twist on a classic Mexican salsa. 🇲🇽

    It combines the sweet and tangy flavor of pineapple with other zesty fresh ingredients. 

    Growing up, my family always had traditional Pico de Gallo on hand on hand and served as a healthy snack. 

    The addition of pineapple to the other simple ingredients gives a tropical touch, making it even more irresistible. 

    Ingredients

    The ingredients needed to make Pineapple Pico de Gallo labeled and sitting on a marble surface.
    • tomatoes, diced
    • green jalapeño peppers – stems removed, seeds removed, and finely diced 
    • white onion, yellow onion, or red onion – diced 
    • fresh cilantro – chopped
    • fresh pineapple – diced 
    • lime juice
    • Salt to taste

    To use canned pineapple, simply drain, chop into small cubes, and use as instructed in the recipe.

    However, the best way to take advantage of the health benefits is to use fresh produce in fruit salsa recipes.

    Pineapple is a great source of Vitamin C, Bromelain, and also has enzymes to help aid digestion.

    How to Select a Ripe Pineapple 🍍

    • Check the color: Find a golden-yellow pineapple, especially at the base.
    • Smell the fragrance: Sniff the base for a sweet, tropical aroma.
    • Feel the texture of the whole pineapple: Press the skin gently; it should slightly yield to pressure.
    • Check the leaves: Look for green, fresh leaves, avoiding brown or wilted ones.

    Instructions

    Mixing the salsa ingredients in a large glass bowl.
    • In a large bowl, combine the ingredients – sweet pineapple, tomato, onion, cilantro, and jalapeño.
    • Squeeze the fresh lime juice over the mixture, and gently stir to combine.
    • Season with salt to taste, and mix well.

    Pro Tips:

    You can substitute the jalapeño with serrano peppers or habanero peppers for more heat. 🔥

    For a milder salsa, adjust the spice level by removing the seeds and membranes from the jalapeno pepper. OR, use a green bell pepper instead. 

    Store the salsa in an airtight container in the fridge for up to 2-3 days.

    • Let the salsa rest for 15-30 minutes to allow the flavors to develop.
    • Serve with your favorite tortilla chips or dishes and enjoy! 🥳

    You might hear this fresh salsa recipe referred to as “salsa cruda” or “salsa fresca.” Either of those terms mean that there was no cooking involved.

    Using pre-cut pineapple will make this salsa a lot faster. Look for crisp texture if buying it at the store.

    Ingredients

    • 2 tomatoes diced
    • 2 jalapenos stems removed, finely diced
    • 1/2 cup diced onion (white, red, yellow)
    • 1/2 bunch cilantro (chopped)
    • 1 cup fresh pineapple diced
    • 1 lime (juice)
    • salt (to taste)

    Instructions

    • Add the tomatoes, jalapenos, onion, cilantro, pineapple, lime, and salt in a bowl.
    • Mix to combine.
    • Taste for salt and adjust accordingly.
    • Serve with chips.
