    Mulitas de Asada + VIDEO

    Mulitas de Asada are made of two crispy tortillas stuffed with beef and ooey gooey cheese. Serve with your favorite salsa and enjoy!

    Carne Asada Mulitas, in a nutshell, are double-decker beef quesadillas. They are the ultimate comfort food that you’ll crave all year round. 🤤🌮

    Muitas means “little mules.” In Spanish, the singular word mulita means “little donkey.” These guys carry a load of flavors and are insanely good!

    You’ll find them at Mexican taco stands and Southern California food trucks everywhere. 

    It almost like a “taco sandwich.” A super tasty way to use up leftovers. 

    The recipe that I’m sharing with you today is an easier version of “mulitas de carne asada.” Or try making them out of beef birria. Both are delicious!

    Ingredients

    The best choice of meat for carne asada: either flank or skirt steak. Here, you see chopped flank steak. 

    For those of you who like it spicy, add 2 jalapenos. 

    What Type of Cheese To Use:

    Use a cheese that melts well. Pictured is Queso Menonita, a traditional cheese from Durango.

    Or swap it out for Monterey Jack, Manchego, Cheddar Cheese, or Oaxaca cheese. 

    What’s the main difference between a quesadilla and a Mulita?

    • A quesadilla is usually made with flour tortillas or corn tortillas and cheese.
    • A mulita uses two soft corn tortillas and has carne asada steak and melted cheese. 

    Instructions

    • Season the meat with spices. 
    • Mix well. 

    Easy Way:

    It makes it easier if the meat is chopped before cooking. At taquerias, they will take the grilled meat, chop it up, grill the meat again to get it crispy, then assemble the mulita. 

    By chopping it up before cooking, we are skipping an extra step. 

    Traditional Way:

    However, you can go the traditional route and grill the flank steak, chop it up, add it to a hot skillet to crisp it up, then assemble it using homemade corn tortillas.

    • Heat olive oil in a large skillet over medium-high heat.
    • Cook the seasoned meat.
    • Add the onion and jalapeno. 

    The meat is ready when the liquid is absorbed and the meat is crispy. 

    About 15-20 minutes. Be sure to stir occasionally. Here, we’re making this with asada, but it would be just as tasty with al pastor.

    How to Assemble

    • Heat a well-oiled griddle on medium heat and add a soft corn tortilla. 
    • Add shredded Monterey jack cheese, meat filling, and more cheese. 
    • Place the top tortilla. 
    • Cook for 2 minutes and flip. 

    After you flip the side of the tortilla, open it up slightly. The layer of cheese should be melting. 

    Some people like to add cilantro and chopped onions to the center at this point. That’s totally up to you.

    • Press down as they cook.
    • They are ready when the cheese is fully melted. 

    Pro Tips:

    • Oiling the griddle is optional, but the vegetable oil will help make the crispy tortillas golden brown. The tortillas will cook with or without the oil. As long as the cheese is melted inside, you’re good to go. 
    • You can also dip the tortillas in the fat from the pan to crisp up the tortilla.
    • If any cheese oozes out, it’s ok! Kinda like Tacos Gobernador and Birria Tacos, the cheese forms a crust that’s undeniably yummy.

    What to Serve With It:

    • Lime wedges
    • Roasted Tomato Salsa 
    • Radishes
    • Chopped onions
    • Chiles Toreados

    The next time you’re at a Mexican restaurant, be sure to get these with an order of horchata and top with queso fresco and pico de gallo. 

    You’re going to love every bite of these Mulitas de Asada. They’re loaded with flavor and yummy cheesiness that’s totally irresistible.

    Ingredients

    For the Beef:

    • 1 ½ lbs flank steak chopped
    • 1 ½ teaspoon salt
    • ½ teaspoon ground pepper
    • 1 tablespoon garlic powder
    • 1 tablespoon paprika
    • ½ teaspoon ground oregano
    • 1 teaspoon ground cumin
    • 2 tablespoon olive oil
    • ½ onion diced
    • 1 jalapeno finely diced

    To Assemble Mulitas:

    • 1 tablespoon olive oil
    • 4 cups shredded cheese (Monterey Jack, Oaxaca, Manchego)
    • 20 corn tortillas

    Instructions

    For the Beef:

    • Season the beef with all the spices.
    • Heat the olive oil in a large skillet.
    • Add the seasoned beef, onion, and jalapeno to the skillet.
    • Cook until the liquid has been absorbed.
    • Stir occasionally.
    • Allow the meat to crisp up.
    • About 15-20 minutes.

    To Assemble Mulitas:

    • Brush oil all over a griddle.
    • Turn on heat.
    • Place a tortilla on the griddle.
    • Add about 2 tablespoons of shredded cheese to the center.
    • Add about 2 tablespoons of the meat filling on top of the cheese.
    • Add an additional tablespoon of cheese on top of the meat.
    • Place another tortilla on top.
    • Using a spatula, press down on the mulita.
    • Cook for 2 minutes.
    • Flip and press down again.
    • Cook for 2 minutes.
    • Remove and repeat until all the ingredients are gone.
    • Serve and enjoy!
