    Ingredients

    • Ripe Strawberries
    • Plain Yogurt
    • Vanilla extract
    • Popsicle molds
    • Wooden popsicle sticks

    Swap Out yogurt for half-and-half or whipping cream.

    To use frozen strawberries if fresh ones are not available, just thaw them slightly before blending.

    Substitute the sugar with a sugar substitute like Stevia or maple syrup. Keep in mind the sweetness might vary, so adjust according to your taste.

    History:

    Popsicles, or ‘paletas’ as we call them in Mexico, have a long history. Made with natural ingredients and fresh fruit, they were brought to Mexico by a Spanish immigrant and quickly gained popularity due to their refreshing taste and endless flavor possibilities.

    • Rinse the fresh strawberries and cut off the tops.
    • Remove the stems and dice into very small pieces.
    • Add the strawberries to a blender or food processor. 
    • Save some for the final steps.
    • Blend until smooth.

    Choosing Strawberries

    To select the perfect sweet strawberries, look for berries that are bright red with a glossy shine. Their caps should be fresh and green. Avoid berries with white or green patches.

    For a dairy-free option, replace yogurt with more healthy ingredients like plant-based yogurt or coconut milk.

    Opt for Greek yogurt instead of plain yogurt or vanilla yogurt for “healthier” homemade strawberry popsicles.

    You can also add a bit of finely chopped strawberries to the popsicle molds before pouring the blended mixture. This adds a wonderful texture and burst of flavor in every bite.

    Don’t have popsicle molds? Use small paper cups and popsicle sticks! Just fill the cups, cover them, and insert the stick through the foil to hold it in place.

    Ingredients

    • 1 lb strawberries
    • 7 ounces sweetened condensed milk (half a 17 ounce can)
    • ½ cup plain yogurt

    Instructions

    • Rinse the strawberries.
    • Remove the stems and dice into very small pieces. Set aside.
    • In a bowl, whisk the sweetened condensed milk and yogurt together.
    • Pour the milk mixture over the strawberries.
    • Add the strawberry mixture to each popsicle mold.
    • Fill each mold, leaving enough room for the stick.
