Mascarpone Ice Cream Sandwiches

- 24 graham crackers
- 14 oz can sweetened condensed milk
- 2 cup heavy cream
- 8 oz mascarpone cheese
- 1 cup mini chocolate chips
- ½ teaspoon vanilla
Line a baking sheet with foil and lay out 12 graham crackers.
In a large mixing bowl add sweetened condensed milk, vanilla, heavy cream, and mascarpone whip ingredients with an electric mixer on low for 2-3 minutes.
Once your ingredients have combined, turn your mixer on high and whip for 5-8 minutes until it is nice and fluffy.
Fold in chocolate chips.
Spread the ice cream mixture across the graham crackers until a nice thick layer is even.
Lay 12 more graham crackers on top of the ice cream mixture and gently press down to release the air bubbles.
Freeze for at least three hours.
Once frozen you can break apart the sandwiches into 24 pieces.
Store is a gallon size freezer bag and enjoy!
- You can add any flavor you like instead of chocolate chips. Caramel, butterfinger, instant coffee, and nuts are all great additives to your ice cream.
