My son is having the best summer vacation EVER! He’s going to the beach, sailing with his buddies, lots of library time .. I can’t even remember the last time I read something that was just for fun. The problem that I’m having is making sure the two of us are fed during the day. I can’t let him go sailing for a few hours, knowing that his belly is running on empty. Then, there are the times when I feed him and later realize I haven’t eaten anything. Yikes! Solution: Fiber One Bars.
I was at Walmart and hit up the cereal aisle to pick up some Fiber One Bars. They have different kinds, depending on your needs. If you’re up for a snacking moment, want to indulge, or need a boost of protein energy, Fiber One has you covered. Coconut almond is my favorite, but I also picked up some cheesecake bars for when I need something sweet. No, I’m not sweet enough. 😉 PS: They also sell them in Mega and Value Packs.
Fiber One Bars are individually wrapped. They will help you stay ahead of the curve of having a “snaccident.” You can put them in your purse and forget about them for days, and they will still taste good. Unlike the banana you left in there and needed to send to the dry cleaners. Been there. Done that! Add an apple or a handful of almonds, and you won’t find yourself (or your little one) rummaging through the cupboard for something to eat – stale bagels, greasy pizza. I always feel terrible when that happens. Then again, what mom has NOT experienced that before?
The other challenge is actually getting my son to eat his food. The easiest way is by making fun kids food like this Bug in the Garden. It was gone in 60 seconds. 😀 Enjoy!

A Bug in the Garden Using Fiber One Bars
- Fiber One Bar
- Peanut Butter
- 1 apple slice
- Cocoa powder
- 2 mini chocolate chips
- Add peanut butter to a Fiber One Bar and top it off with an apple slice.
- Put in the freezer for 5 minutes.
- In the meantime, add cocoa powder to half a teaspoon of peanut butter and form a small ball.
- Add the ball in front of the end of the apple slice.
- Add the pretzels on top of the ball.
- Add eyes.
- Return to the freezer for another 5 minutes.
- Decorate the plate with lettuce.
