The Ultimate BBQ Chicken Sandwich

The Ultimate BBQ Chicken Sandwich is the most yum-o-licious sandwich you can make with leftovers. Smoky, savory, and full of amazing grilled goodness. Hope you enjoy!

The Ultimate BBQ Chicken Sandwich

For me, BBQing is all about the experience of sitting outside with a glass of wine as your clothes and hair are infused with smoke. There are conversations to be had. World politics and sports events to be discussed. And when I have leftovers, I make the Ultimate BBQ Chicken Sandwich. Yes, folks, it’s the ULTIMATE!

I think it has to do with the fact that it’s made with leftovers from the last time you were in front of the grill and memories of an easy, relaxing time come into mind as you eat. The Ultimate BBQ Chicken Sandwich is the most incredible, most yumm-o-licious sandwich imaginable. Yes, folks, it’s the ULTIMATE. lol. If you don’t believe me, believe my son who begged me for seconds. As you can see, he takes after his mother. (Maggie smiling) I make a mean BBQ chicken too. Do you rub your chicken? That just sounds wrong… Haha! A good BBQ Chicken Spice Rub adds another layer of goodness to your chicken. I can’t stress enough the importance of a good cooking thermometer. You don’t want to get anyone sick.

Shortcut:
Use a rotisserie chicken. Remove chicken meat and let it simmer in your favorite BBQ sauce.

Making Coleslaw

Coleslaw is great for entertaining because it’s cheap to make, but if you’re running around and need to get food on the table ASAP, buy it. There’s usually a lot of chopping involved, but it’s perfect for that annoying person in your kitchen who insists on helping but you’ve tasted what they call “good food” and need to keep them busy as you get the real cooking done… We all know THEM people. Sigh.

I also used mini buns. It’s my new thang. I want bread, but I don’t want to feel like a big fat porky pork. With mini buns, I get to eat BREAD. Yay! Besides, whenever I use mini hamburger buns, I always think I’m at a party or eating sliders as an appetizer. Hope you like the Ultimate BBQ Chicken Sandwich. Yes, folks, it’s the ULTIMATE. LOL.

Ingredients

  • 8 mini buns
  • 1 lb chicken cooked and shredded
  • BBQ sauce your choice
  • 1 lb cooked bacon slices
  • 1/4 cup coleslaw

Instructions

  • Top the mini bun with 2 tablespoons chicken
  • Drizzle BBQ sauce on top of the chicken
  • Add 1-2 slices of bacon
  • Add 1 tablespoon coleslaw
  • Top with other end of mini bun
  • Enjoy!

      LOL. I found the mini buns at Trader Joes, but you can also use dinner rolls. As you can see, I need my bread fix. 😀
