    Chipotle Mayo Sauce (or Baja Chipotle Sauce) is a smoky, spicy, and creamy condiment that’s perfect for adding flavor to all kinds of dishes.

    Living near Baja California, I’ve learned that the key to making any dish unforgettable was to pack it with bold, unique flavors – like this smoky mayo.

    With just a handful of ingredients, you can whip up a batch of this easy recipe in no time.

    Ingredients

    The ingredients needed to make the sauce labeled and sitting on a marble surface.
    • Mayonnaise
    • Chipotles in adobo sauce 
    • Garlic powder
    • Lime juice (or lemon juice) 

    This spicy mayo recipe only takes a few simple ingredients to make. Swap out canned chipotles in adobo for 1 tablespoon chipotle powder. 

    ​A great addition is onion powder. Add only ½ teaspoon in the recipe, if using. 

    While some people make their own mayo from scratch, I’m all about easy. That’s why I recommend you buy your favorite mayo at the grocery store instead of messing around with egg yolks.

    Chipotle Mayo vs. Chipotle Aioli 

    What’s the difference? While each is a creamy sauce emulsion, aioli is a traditional Mediterranean sauce made with garlic and olive oil, while mayo is made with egg yolks, chipotle chiles, and canola, soybean oil,  or avocado oil.

    • Put the mayo and chipotle peppers in an immersion blender, regular blender, or food processor. 
    • Add lime juice, garlic powder, and salt.

    Remember this recipe next time you have leftover chipotles. Chicken salad, burrito bowls, it adds a lot of flavor to just about any dish.

    This chipotle mayonnaise recipe is high in fat and calories but can be enjoyed in moderation as a flavorful addition to sandwiches, salads, and other dishes.

    If you choose mayo that is made with avocado oil,  it is also a good source of Vitamin E and healthy fats. It’s a great alternative to sour cream. You can even create a vegan version.

    Transfer the sauce to a jar or container and store it in the refrigerator until ready to use. 

    History

    Mayonnaise was invented in France in the 18th century, and it quickly became popular all over the world. The French undoubtedly introduced it to Mexico when they invaded. Anyone ever hear of Cinco de Mayo?

    Chipotle peppers, of course,  are a staple in Mexican cuisine, and the combination of these two ingredients has become a beloved condiment in Baja as well as in Mexican-American cuisine.

    Serve in a small bowl with seafood, chips, sweet potoao wedges, sweet potato fries, or french fries.

    Pro Tips:

    • Use fresh lime juice for the best flavor.
    • Add more or less chipotle peppers depending on your desired level of spiciness.
    • Make a big batch and store it in the refrigerator for up to a week or two in an airtight container.
    • Do not freeze your spicy mayo. Although it will be safe to eat, the texture will be off.

    Ingredients

    • 1 cup mayonnaise
    • 2 chipotle in adobo sauce
    • ½ tsp garlic powder
    • ½ lime juice

    Instructions

    • Put everything in the food processor.
    • Blend until smooth.
    • Serve with seafood, chips, or french fries.

    Notes

    This recipe makes 16 tablespoon or 1 cup. 
    Store in an airtight container in the fridge and take out as needed. Consume within the week.
