Table of Contents
🍴 Ingredients
- Salmon filets
- Salt and pepper
- broccoli
- cauliflower
- carrots
- zucchini
- red onion
- oil
- garlic powder
- chili powder
- cumin
- limes
- cilantro
To reduce the heat, omit the chili powder. The veggies will still have plenty of flavor.
To up the heat, swap out the chili powder with ground chili de arbol.
Instead of lime juice, you can also use white distilled vinegar.
🥣 Instructions
- Mix the marinade ingredients.
- Add the veggies to a big bowl and coat with the marinade.
👩🏼🍳 Pro Tips:
Feel free to change up the vegetables, depending on your preference. Make this easier and use a bag of pre-chopped veggies from the grocery store.
- Rinse and pat dry the salmon.
- Season with salt and pepper.
- Place the salmon on a baking sheet. Skin side down.
🐟 How to Choose Fresh Salmon
For farm-fresh salmon, look for a light pink color. Wild-caught salmon will have a darker pink color. If you see any gray spots on the fish, the salmon is not fresh. Look at the eyes on a whole salmon. They should be clear and shiny.
- Add the marinated veggies around the salmon.
- Bake in the oven at 400 degrees.
- Once the salmon is ready, remove from the pan. Return the veggies to the oven to finish cooking.
However, this last step might depend on how thick you cut your vegetables. Test the vegetables. If you feel they are ready, then skip this step, and dinner is ready!
🫙 Storing and Reheating
- Store any leftovers in an airtight container. Consume within 3 days.
- Preferred method of reheating: In an oven for 15 minutes. Or, place in a skillet, cover and cook on low with a splash of water for 5 minutes or until cooked.
