    Baked Salmon with Roasted Vegetables is a tasty and easy weeknight dinner.

    We love roasted veggies. Here, I’m using salmon but feel free to add another type of fish or lean chicken. 

    This makes a delicious meal for the entire family and is ready in no time!

    🍴 Ingredients

    The ingredients needed to make the salmon with vegetables.
    • Salmon filets
    • Salt and pepper
    • broccoli 
    • cauliflower 
    • carrots
    • zucchini
    • red onion 
    • oil
    • garlic powder
    • chili powder
    • cumin
    • limes
    • cilantro 

    To reduce the heat, omit the chili powder. The veggies will still have plenty of flavor. 

    To up the heat, swap out the chili powder with ground chili de arbol. 

    Instead of lime juice, you can also use white distilled vinegar. 

    🥣 Instructions

    Making the marinade and dressing the vegetables in a large bowl.
    • Mix the marinade ingredients. 
    • Add the veggies to a big bowl and coat with the marinade. 

    👩🏼‍🍳 Pro Tips:

    Feel free to change up the vegetables, depending on your preference. Make this easier and use a bag of pre-chopped veggies from the grocery store.

    • Rinse and pat dry the salmon. 
    • Season with salt and pepper. 
    • Place the salmon on a baking sheet. Skin side down. 

    🐟 How to Choose Fresh Salmon

    For farm-fresh salmon, look for a light pink color. Wild-caught salmon will have a darker pink color. If you see any gray spots on the fish, the salmon is not fresh. Look at the eyes on a whole salmon. They should be clear and shiny.

    • Add the marinated veggies around the salmon. 
    • Bake in the oven at 400 degrees. 
    • Once the salmon is ready, remove from the pan. Return the veggies to the oven to finish cooking. 

    However, this last step might depend on how thick you cut your vegetables. Test the vegetables. If you feel they are ready, then skip this step, and dinner is ready!

    🫙 Storing and Reheating

    • Store any leftovers in an airtight container. Consume within 3 days. 
    • Preferred method of reheating: In an oven for 15 minutes. Or, place in a skillet, cover and cook on low with a splash of water for 5 minutes or until cooked.

    Baked Salmon with Roasted Vegetables

    Ingredients

    • 3 salmon filets
    • Salt and pepper (for fish)
    • 1 cup broccoli florets
    • 1 cup cauliflower florets
    • 2 carrots sliced
    • 1 large zucchini sliced
    • 1 large red onion chopped into 1-inch chunks
    • ½ cup Mazola corn oil
    • 1 teaspoon salt
    • ½ teaspoon ground black pepper
    • 1 tablespoon garlic powder
    • ½ teaspoon chili powder
    • ½ teaspoon ground cumin
    • 2 limes juiced
    • 2 tablespoon chopped cilantro topping

    Instructions

    • Preheat the oven to 400 degrees F and grease two large baking pans. Arrange salmon filets on the baking sheets.
    • Season with salt and pepper.
    • In a small bowl, stir together the oil, salt, pepper, garlic powder, chili powder, cumin and lime juice.
    • In a large bowl, add all the veggies and the oil mixture.
    • Mix to combine.
    • Arrange the veggies around the salmon filets on the baking sheet.
    • Bake for 12-15 minutes until the salmon is opaque and flaky when pulled apart with a fork.
    • Take the baking sheets out of the oven and remove the salmon. Tent with foil paper.
    • Return the veggies to the oven. Broil for 2 minutes.
    • Remove from the oven.
    • Serve and top with chopped cilantro and drizzle with more lime.

    Notes

      Baked Salmon with Roasted Vegetables was marvelous, all the spices, cilantro, fresh lime juice, was culinary de-lite. Cumin was a very nice touch, I did add some dill and the chili powder gave it spiciness. The veggies still had a nice bite and tasted so yummy. It’s a keeper, appreciated that it was easy and quick but did not disappoint on flavor at all. Fan & Follower, Thanks for sharing
