    Camarones Enchipotlados

    Camarones Enchipotlados is made of tender shrimp in a rich tomato sauce that’s jam-packed with flavor. Slightly spicy, but it can be easily adapted to your taste. All ready in under 20 MINUTES!

    Camarones Enchipotlados (or Shrimp in Chipotle Sauce) is easily one of my favorite go-to recipes.

    The spice is right, and outta sight! Don’t worry. I’ll show you how to adjust the heat level and keep all the yumminess.

    It’s literally ready in minutes, and if you use some pantry items, it’s done in a snap.

    Ingredients for Camarones Enchipotlados on a wooden surface.

    These are the ingredients you will need.

    • Shrimp
    • Chipotle peppers in adobo sauce
    • Tomato
    • Onion
    • Garlic
    • Water
    • Salt
    • Olive Oil

    These are large-sized shrimp, but you can use jumbo, medium, or small too. As long as they weigh 1lb., they can be used in this recipe.

    Also, these are already deveined for easier, faster cooking. If the ones you buy are not deveined, you will need to add more time to the overall cooking time.

    Use your pantry!

    Omit the tomatoes, onion, garlic, and water, and instead use a can of tomato sauce.

    How To Make It

    • Start by boiling the tomatoes.
    • Or, use a can of tomato sauce.

    If you have fresh tomatoes, cover them with water and bring to a boil. This will only take a few minutes.

    These are Roma tomatoes, but you can use any variation. For a chunkier sauce, dice the tomatoes and saute with the rest of the ingredients minus the water.

    • Discard the water used when boiling.
    • Place the boiled tomatoes in the blender along with the chipotle, onion, garlic, water, and salt.
    • Blend until smooth.

    Pro Tip: Make this ahead of time. This chipotle tomato sauce freezes extremely well. Thaw and use as normal.

    There are many Mexican recipes that use tomato sauce such as Sopa de Fideo, Sopa de Conchas, Fideo Seco

    • Saute the onion in oil.
    • Add the chipotle tomato sauce.
    • Bring to a simmer.
    • Add the shrimp.
    • Cook for 4-5 minutes, or until shrimp is no longer pink.

    For a thicker sauce, simmer it in the skillet longer before adding the shrimp. This is the time also to taste for salt and heat level.

    Be sure to turn off the heat once the shrimp turn pink and serve right away. If not, they will become rubbery.

    • If the sauce is too hot, add a splash of water.
    • For a milder chipotle sauce, only use one chipotle pepper in adobo.


    Great Idea! Camarones Enchipotlados is made with shrimp. Try making this sauce with chicken, beef, or fish.

    Storing Instructions

    Place any leftovers in an airtight container and store in the fridge for up to 3 days. Freezing this dish is not recommended.

    • Arroz Blanco
    • Frijoles Refritos
    • Ensalada de Nopales
    • Champiñones a la Mexicana

    Ingredients

    • 2 tomatoes
    • 5 cups water (divided)
    • 1 garlic clove
    • 2 chipotle pepper in adobo sauce
    • 1 tspn salt
    • 1 tablespoon olive oil
    • ¼ onion diced
    • 1 lb shrimp large-sized

    Instructions

    • In a stock pot, add the tomatoes and 4 cups water.
    • Cover and bring to a boil.
    • Simmer for 4-5 minutes, or until soft.
    • Discard the water.
    • Add the boiled tomatoes to a blender.
    • To the blender, add 1 cup water, chipotle, and salt.
    • Blend until smooth.
    • Set aside.
    • Heat the oil olive in a large skillet.
    • Add the onion. Saute for 1 minute.
    • Add the chipotle tomato sauce to the skillet.
    • Bring to a simmer.
    • Add the shrimp.
    • Cook for 4-5 minutes, or until shrimp are pink.
    • Serve immediately, and enjoy!

    Notes
