    Sunrise Surprise

    I enjoy a good cocktail especially in the summer when it’s hot out. Remember I live on the beach. A cold drink is almost a necessity around here. I even have a cup holder on my bicycle… for coffee, of course. 😉 Did you know that in Coronado, you can get a DUI for drinking and riding your bicycle? Nope, not joking.

    I call this drink a Sunrise Surprise for a couple of reasons:

    One – This is a faux Tequila Sunrise.
    Two – The orange soda reminds me of sunrises.
    Three – It’s a skinny cocktail, and I added lemon. SURPRISE!

    Let’s talk more about skinny cocktails for a minute. I’m a paddle boarder, but I don’t do enough paddling to keep me in a bathing suit all summer long. I don’t know about you, but I can use all the help I can get. That’s why I have tons of skinny cocktail recipes. My best tip to making a skinny cocktail: use a skinny simple syrup.

    Skinny Simple Syrup:
    ¼ cup Warm water
    1 package Stevia

    Direction: Mix together. Cool before you use.

    The problem with this simple syrup is that it’s a lot sweeter than your regular simple syrup. Go easy with it.

    2 oz Tequila Silver (128 calories)
    2 oz Zero Calorie Orange Soda (0 calories)
    2 oz Skinny Simple Syrup (0 calories)
    juice of half lemon (8 ½ calories)
    3 mint leaves (0 calories)
    ice (0 calories)

    Directions: Add skinny simple syrup and mint leaves into a cocktail container. Muddle to release the mint flavor. Add remaining ingredients. Shake. Shake. Shake. Serve and enjoy!

    Total calories: 136

    Calories in a regular Tequila Sunrise: 223

    Now that’s a BIG difference! You could almost drink two of the Sunrise Surprise. Do you see why I love skinny cocktails?
