When I was little, my mom used to make chili beans. It wasn’t until much, much later in life that I learned what she called “chili beans” was actually chili. My mom makes some killeee chili too. Her Slow Cooker Chipotle Chili would be a blue ribbon winner at any chili cookoff.
Chipotle is smoked jalapeño. It’s spicy, yes. You don’t need a lot. You just need a little bit. One chipotle pepper diced up for an entire pot of Slow Cooker Chipotle Chili goes a long way.
Diced green peppers and onions give tons of flavor to the Slow Cooker Chipotle Chili.
Can’t make Slow Cooker Chipotle Chili without some cumin love. Keep it cumin, love. Keep it cumin, love. Don’t crock, baby. Don’t crock. Actually, you do “crock” this one. In fact, it’s a total “crock” of beans and beefy goodness.
Canned pinto beans are somewhat sacrilegious in the Mexican world. My mom always had a big pot of beans going, and for years, I did too. Nowadays, I have very little time. I’ll gladly spend the extra 30 cents in buying a can of pinto beans. 30 cents makes sense since I’m so busy.
You will need two cans of tomato sauce. Instead of hitting the sauce 😉 you can use cans of diced tomato instead.
Now let the slow cooker do its magic. 8 hours on low and 4-6 hours on high.

Slow Cooker Chipotle Chili
Ingredients
- 1 pound ground beef
- ¾ cup diced onion
- 1 diced green bell pepper
- 2 cloves garlic minced
- 2 10.75 ounce cans tomato sauce
- 2 15 ounce can pinto beans, drained
- ½ cup beef broth
- ½ cup corn
- 1 chipotle pepper finely diced
- ½ tablespoon chili powder
- ¾ teaspoon dried oregano
- 2 tablespoons ground cumin
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
- Sour cream optional
- Cheddar cheese optional
- Green onions optional
Instructions
- Cook ground beef. Drain.
- Put cooked ground beef and all remaining ingredients in the slow cooker.
- Set slow cooker on low for 8 hours or 4-6 hours on high.
- Enjoy!

I love love love chipotles in chili but have left them out the past few year because..well…kids. But this has me craving it bad – might have to try your recipe and make sure there’s a bag of chicken nuggets in the fridge 😉
