This dip comes together very quickly. So, don’t leave the stove. You start by adding 1 tablespoon butter and onion to a pan. I’m using a cast-iron skillet because it can go from stove to table. If you don’t have one, any skillet will do. And since it IS Halloween, it’s perfectly ok to “kill it with the skillet.” 🙂
From here, you need to mash the pinto beans. It’s a Monster Mash! Get it? Haha! If you already have refried beans, you can add it here and skip this step. Less time in front of the stove means more time enjoying the Halloween festivities.
I used Cacique Mozzarella, but you can use any easy-to-melt cheese instead like Queso Oaxaca. Cacique also has shredded cheese packages like the Dos Quesos Blend that work great too.
Last but not least, something I almost am never without in my kitchen: Cacique Crema Mexicana. I like it because it’s so versatile – just like me! Just a drizzle of this heavenly, creamy stuff will take your dishes to another level. If you prefer sour cream, that’s fine too.

Monster Bean Dip
Ingredients
- 1 jalapeno finely diced
- ¼ onion finely diced
- 1 tablespoon butter
- 1 teaspoon garlic powder
- Salt
- 1 cup Cacique Crema Mexicana or Cacique Crema Agria
- 1 cup shredded Cacique mozzarella or Queso Oaxaca
- ½ package of cream cheese
- Tortilla chips
- For the Monster Face:
- 2 pickled jalapenos
- Black olives
- Corn Tortillas
Instructions
- In a large skillet, add butter and onion.
- Lower heat to low.
- Next add the pinto beans.
- Mash until smooth.
- Add the jalapeno, garlic powder, salt.
- Add the cream cheese.
- Stir and cook for 1 minute.
- Next add the mozzarella and crema mexicana.
- Stir to combine.
- Cook for 1 minute.
- Taste for salt.
- Serve with tortilla chips.
- Enjoy!
