    Ingredients for Mexican Grilled Chicken

    • boneless, skinless chicken breasts
    • fresh lime juice
    • oil (vegetable or olive oil)
    • salt& black pepper
    • ground oregano
    • ground cumin
    • garlic powder
    • jalapeño,
    • fresh cilantro

This marinade comes together quickly using fresh and pantry-friendly ingredients. The longer you let the chicken soak in the flavors, the better it gets!

To make it spicy, use ½ teaspoon ground chile de arbol or ½ teaspoon ground cayenne.

    👩🏼‍🍳 Step-by-Step Instructions

    • Step 1: Marinate the Chicken: Add the chicken breasts, lime juice, oil, salt, pepper, oregano, cumin, garlic powder, jalapeño slices, and chopped cilantro to a large sealable bag. Seal the bag and massage it gently to combine all the flavors.
    • Place the bag in the fridge and let the chicken marinate for at least 1 hour, or up to overnight for maximum flavor.

    • Step 2: Preheat the Grill: Heat your grill to 375°F. Lightly oil the grates to prevent sticking. Remove the chicken from the marinade and let any excess drip off.
    • Step 3: Grill the Chicken: Place the chicken on the grill and cook for about 6–8 minutes on each side, flipping once, until fully cooked. The internal temperature should reach 165°F. Let the chicken rest for a few minutes before slicing.

    🙋🏻‍♀️ Frequently Asked Questions (FAQ)

Can I use chicken thighs instead of breasts?

Absolutely! Boneless, skinless chicken thighs work great and are extra juicy when grilled.

    Is it spicy?

The jalapeño adds a gentle heat, but it’s not overpowering. Remove the seeds if you want it milder, or leave them in for more of a kick. Or to make it spicy, add ½ teaspoon ground chile de arbol or ½ teaspoon ground cayenne.

    Can I cook this indoors?

Yes! Use a grill pan or skillet over medium-high heat and follow the same cooking times. You’ll still get great flavor without needing an outdoor grill.

How long can I marinate the chicken?

Marinate for at least 1 hour, but no longer than 24 hours to keep the chicken tender.

Three grilled chicken breasts garnished with herbs are served on a decorative plate alongside two whole roasted green jalapeños. The plate rests on a rustic wooden surface.
