    🍔 Making The Perfect Burger

    Aim for a fat content of 80/20 (80% lean meat, 20% fat). This will  balance flavor and juiciness. Ground chuck beef is a classic choice when making burgers. Round or brisket are also good options.

    🔥 Grilling Burgers

    • Clean the grates to help prevent sticking. 
    • Heat up the grill to medium-high heat (375-400 degrees F)
    • Cooking time depends on how well you like your burger done. 
    • Place cheese slices on each burger on the last minute of cooking. 

    ⏰ Cooking Time

    • Rare: Cook for 4 minutes total (125°F). 
    • Medium-Rare: Cook for 5 minutes total (135°F). 
    • Medium: Cook for 6-7 minutes total (145°F). 
    • Well-Done: Cook for 8-9 minutes total (160°F).

    • Slice the hot dogs in half and place on the grill.

    • Then add the ham slices. One minute on each side. 

    🍴 Toppings You’ll Love

    In Mexico, burgers include more than your standard lettuce and tomato. You’ll find a variety of ingredients – ham, hot dogs, bacon, or as in the Durango Burger, pineapple. This recipe is the way many street vendors in Baja California and Mexico City sell them.

    • Place the patty, ham and hotdogs on the bun. 
    • Put mayo, mustard, and salsa on the other side. 

    Word to the Wise: use a large bun! If not, don’t worry too much. The sauces and cheese will act as a glue for the ingredients inside the burger.

    Ingredients

    Hamburger Patties:

    • 2 lbs ground chuck beef 80/20, preferred
    • ½ cup saltine crackers finely crushed
    • 1 egg
    • 2 tablespoon milk
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon salt
    • ½ teaspoon ground pepper
    • ½ teaspoon ground cumin
    • ½ teaspoon ground oregano

    Toppings:

    • 6 cheese slices monterey jack or pepper jack
    • 6 teaspoon mayo
    • 3 teaspoon ketchup
    • 3 teaspoon mustard
    • 6 ham slices
    • 6 hot dogs slice in half
    • ¼ head lettuce separate the leaves
    • 1 ½ tomatoes sliced
    • 1 onion sliced
    • salsa (as desired)
    • pickled jalapenos (as desired)

    Instructions

    For The Hamburger Patties:

    • In a large mixing bowl, place the ground beef, crackers, egg, milk, garlic powder, onion powder, salt, pepper, cumin, and oregano.
    • Mix well until the meat mixture is well combined. (Do not overmix)
    • Divide the meat into equal parts. About 6 big balls, or 12 small balls.
    • Then press the meat down into even disk patties.
    • Place the patties on wax paper.
    • To create an even form, you can press down each patty with a smash press (as in picture).
    • Preheat the grill or a skillet to medium heat. (Approximately 375-400 degrees F.)
    • See cooking times guideline below.
    • For thick patties: Grill or fry the patties for 4 ½ to 5 minutes per side, for medium well.
    • For thin patties: Cook on the griddle for 4 minutes per side, for medium well.
    • One minute before removing from the heat, place a slice of cheese on the patty to melt.
    • Once cooked, place the hamburger patties on a baking dish and cover with foil.
    • Slice the hotdogs in half. Cook them for 2 minutes on each side.
    • Place the ham slices on the grill/ griddle and cook for 1 minute on each side.
    • Toast the buns. 1 minute on each side.

    To Assemble:

    • Place the hamburger on one bun.
    • Slather mayo, mustard, ketchup on one side of the bun.
    • Add the toppings – tomato, lettuce, onion, jalapenos, and salsa.
    • Serve and enjoy!

    This recipe makes 6 big burgers, or press them down with a smash press to make 12 thin burgers.
