You’ll see stands all over the city selling these incredibly delicious burgers. Each time I visit my dad in DGO, I have to get one.

🥩 Ingredients

- Hamburger Buns
- Ham
- Bacon
- Lettuce
- Tomato
- White Cheese (like Monterey Jack or Mozzarella)
- Ground cumin
- Garlic Powder
- Salt and Pepper (not pictured)
- Mayonnaise
- Mustard
- Ketchup
- Pickled Jalapeños
- Pineapple
What makes these burgers different is the use of pineapple and a variety of meats. Also, the use of cumin. We love cumin in Durango!
Instructions

- Form your patties and set aside.
- Season the hamburger patties with salt, cumin powder, and garlic powder.
Either form the patties with the seasoning mixed in. Or, if you buy pre-formed patties at the grocery store, simply season on both sides.
This recipe makes 8 THIN patties just like they make them in Durango, Mexico. However, you can also make 6 thicker patties.
👩🏼🍳 Pro Tips
- You don’t need to mix a bunch of ingredients into the meat to make it taste good. Keep it simple and let the toppings shine.
- Don’t use a lean cut of beef. You want some fat like 80/20 ground chuck.
- Make the burgers roughly all the same size. That way they cook uniformly.
- Use a thermometer when cooking. This will ensure your burger turns out the way you like it.

- Heat up the grill to 400 degrees F.
- Place the patties seasoned side down. Close the lid.
- Then season the un-seasoned side.
- Once you turn the patty, add a slice of cheese.
Skip the seasoning if you already mixed in the spices when forming the burgers.
🍔 How Long To Cook Burgers
- Medium-Rare: Grill burgers for 2 ½ to 3 minutes per side. Look for 130-135 degrees F on the thermometer reading.
- Medium: Grill for 4-5 minutes per side, or until 140-145 degrees F.
- Medium Well/Well Done: 6-7 minutes per side, or until 155-160 degrees F.

When assembling burgers or sandwiches, the mayonnaise, mustard, and ketchup help “glue” the rest of the ingredients.
To keep the patties warm: Place them in a baking dish and cover with aluminum foil. If you still have food to prepare before serving, turn on the oven to 300 degrees F and leave them in there until ready to assemble.

Durango Burger
Ingredients
To Make The Patties:
- 2 pounds ground chuck
- ½ cup saltine crackers (crushed)
- 1 large egg
- 2 tablespoon milk
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- ½ teaspoon black pepper
- 8 slices white cheese
Toppings:
- ¼ cup mayonnaise
- ¼ cup mustard
- ¼ cup ketchup
- ½ head lettuce
- 1 sliced tomato
- 8 ham slices
- 8 slices pineapple must have (canned and drained)
- 16 pickled jalapenos (or as many as desired)
- 8 bacon slices (2 per burger)
Instructions
- In a large bowl, add the ground beef, crushed saltine crackers, egg, salt, garlic powder, pepper, and cumin. Mix well.
- Divide the meat into 8 equal sections.
- Take one of the sections of meat in your hands and shape into a thin disk.
- Place the patties onto wax paper. Keep in the fridge until ready to grill.
- Preheat the grill to 400 degrees F.
- Grill according to taste. (see below for cooking times)
- Flip and add a slice of cheese.
- Set aside as they are cooked.
- Heat up the buns.
- Stack the patty on the hamburger bun, add the toppings, and serve.
