Hot honey and corn on the cob were meant to be together. Add a butter bath? Now we’re talking next-level flavor.

    🌽 Ingredients

Overhead view of ingredients for a recipe: corn on the cob, a pitcher of milk, butter, a jar of hot honey, black pepper, cilantro, and salt, all labeled on a white surface.
    • Butter
    • Salt and Pepper
    • Hot Honey
    • Corn
    • Milk
    • Cilantro (optional)

Swap out corn on the cob for corn kernels. Use 1 ½ cups of kernels to make this recipe.

If you can’t find hot honey at your local grocery store, you can also get it online. Or make your own by mixing honey, red chili flakes, and a splash of apple cider vinegar.

    👩🏼‍🍳 Instructions

Chopped pieces of corn on the cob are arranged on a marble cutting board, with a large kitchen knife placed next to them. Corn kernels and pieces are scattered on the light surface.
    • Remove the husks and any silk.
    • Chop the corn into small pieces.

Chopping the corn up will help it fit better inside the pot.

This side dish makes a great alternative to Elote Mexicano or Elote en Vaso.

Four images show the process of cooking corn: milk is poured into a pot, corn cobs are added, the corn simmers in the milky liquid, and tongs lift a cooked corn piece from the creamy mixture.
    • Over medium heat, bring a large pot of water to a boil. Add the milk, butter, salt and pepper, hot honey.
    • Add the corn. Boil the corn for 8-10 minutes.
    • Remove the corn from the butter bath using tongs and serve immediately with more hot honey.

    🫙 Storing Instructions

Place any leftovers in an airtight container and keep in the fridge for up to 4 days. If freezing, place in a sealable bag. Remove as much air as possible and freeze for up to 4 months. Thaw before reheating. Reheat in the microwave for 2 to 2 ½ minutes.

    🙋🏻‍♀️ Frequently Asked Questions (FAQs)

Can I use frozen corn instead of fresh?

Yes! Just thaw it first. Boil it the same way in the butter bath.

What if I don’t have hot honey?

You can make your own by mixing regular honey with red chili flakes and a splash of apple cider vinegar. Taste and adjust according to your liking.

Can I make this ahead of time?

This dish tastes best fresh, but you can boil the corn ahead and reheat it in the butter bath for a few minutes before serving.

    Is this dish spicy?

It has a mild kick from the hot honey, but it’s more sweet than spicy. You can adjust the heat level to your taste by using less hot honey.

What does the milk do in the butter bath?

The milk helps make the corn extra tender and gives the butter a creamier texture for soaking in flavor.

Hot Honey Corn on the Cob is a little sweet, a little spicy, and super buttery. It’s cooked in a warm butter bath that makes it extra juicy and full of flavor. Trust me, you’ll want to make this again and again.
