
A glass of wine in one hand, the smell of meat on the grill, good company. Life doesn’t get any better than that. We also have these twinkly lights in our outside patio. Perfect for entertaining or romantic nights with the Hubs. Grilling season is my favorite time of the year. Sure, you can do it inside with a grill pan when it’s snowing outside, but it’s just not the same. Then, the smell stays inside the house.. ugh! No one wants that. Must take advantage of the weather while we can with Spice-Rubbed Ribs with Chipotle BBQ Sauce.

This spice rub is so yummy and versatile. I make a big batch and store it in a sealable bag. You can add it to chicken or potatoes. On Spice-Rubbed Ribs with Chipotle BBQ Sauce, though, it is off the hook delicious! It’s best to do this step overnight, or at least 6 hours. The longer it sits, the better. Don’t want to make your own? THIS ONE is pretty good too.
Here’s a BBQ Tip: Make little slashes to the meat with the edge of a sharp knife before you add the rub. The ribs will absorb the rub better.
For all the single ladies, if you want to find a man, go to a BBQ competition! Men. Men. Lots and lots of men. I’ve seriously considered entering a competition because, humbly speaking, my BBQ sauce is pretty darn good.
Or, if you’re crunched for time, THIS is my favorite store-bought BBQ sauce. Just add chipotle.

Once Spice-Rubbed Ribs with Chipotle BBQ Sauce are off the grill, you let them cool under a tent of foil paper. Then you add more BBQ sauce, and lastly, slice them up into individual slices of BBQ heaven. YUM!

Spice-Rubbed Ribs with Chipotle BBQ Sauce
Ingredients
- For the Ribs:
- 2 Racks of Ribs
- For the Spice Rub:
- ¼ cup brown sugar
- 1 tablespoon ground cumin
- 2 tablespoons paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon chili powder
- 2 tablespoons salt
- 1 teaspoon cayenne
- 1 teaspoon pepper
- For the Chipotle BBQ Sauce:
- 1 tablespoon olive oil
- ¼ onion minced
- 1 garlic clove finely minced
- 1 cup ketchup
- ¾ cup brown sugar
- 2 tablespoons Worcestershire Sauce
- 1 teaspoon soy sauce
- ¼ cup apple cider vinegar
- ½ cup maple syrup
- ½ teaspoon yellow mustard
- 2 tablespoons paprika
- 2 tablespoons ground cumin
- ¼ teaspoon pepper
- 1 chipotle (in adobo sauce) finely minced
Instructions
- For the Rub:
- Mix all the ingredients together and set aside until ready to use.
- For the Chipotle BBQ Sauce:
- Heat olive oil to the a deep stock pan.
- Add onion and cook until translucent.
- Add all the remaining ingredients for the BBQ sauce and let simmer for 30 minutes.
- Set aside until ready to use.
- For the Ribs:
- Rub the ribs with the rub on the front and back.
- Cover and let sit for 24 hours (minimum 6 hours) in the refrigerator.
- Preheat oven at 250 degrees F.
- Cook covered for 2 hours.
- The ribs will be tender.
- Preheat the grill at 350 degrees F.
- Note: You can do this in the oven too.
- Brush the Chipotle BBQ sauce on the meat side.
- Cook for 15 minutes.
- Turn the meat over.
- Brush again with Chipotle BBQ sauce.
- Cook for 15 minutes.
- Turn over the meat again and add more Chipotle BBQ sauce.
- minutes total of cooking on the grill or oven.
- Remove from heat and let cool.
- Add more Chipotle BBQ sauce and cut into individual pieces.
- Serve and Enjoy!
