    Queso Fundido with Chorizo

    Queso Fundido with Chorizo is the easiest Mexican appetizer ever. Ooey gooey cheesy goodness that will make you beg for more.

    Recently, a few friends of mine wanted to come over and hang out. They also expected me to make them something amazingly delicious. It comes with territory of being a food blogger.

    Gotta admit, after a full day of testing recipes and studying food, the last thing I want to do is cook.

    That’s when I remembered the easiest Mexican appetizer ever. I’m talking about Queso Fundido.

    Queso Fundido is simply melted cheese. It is Mexico’s version of fondue but only better. I might be a little biased when I say that. Lol.

    Once you try this recipe, you’ll completely agree.

    • FYI: Some people might refer to this dish as Queso Flameado.

    If you see Queso Flameado on a restaurant menu, it is most likely served flambé or they are making it as I am here under the broiler.

    I hit up my nearby Walmart for the cheese and the toppings. Walmart has everything from wine to all the necessary ingredients for a entertaining girls night out.

    This is the wine I picked up: Wente Morning Fog Chardonnay

    My friends love chardonnay. Medium-bodied. Crisp and bright. It’s great for a fun summer night.

    How to Make Queso Fundido

    At Walmart, I also picked up a package of pork chorizo. This goes perfectly as a topping for my Queso Fundido and will add a layer of flavor.

    • Cook the chorizo.

    This is the same type of chorizo that I use to make Chorizo con Huevos or Chorizo con Papas.

    If you have leftover chorizo from breakfast, it will make this next step easier. You can also use beef chorizo. I do not recommend soy chorizo for this recipe.

    Note: Be sure to really drain the chorizo, or your Queso Fundido with Chorizo will be very greasy.

    • Drain the chorizo and set aside.
    • In the same skillet, add a mountain of cheese.

    At Walmart, they have a HUGE bag of family-sized shredded cheese. That’s what I bought. I calculated 8 cups of shredded cheese.

    You can buy the blocks of cheese and shred it yourself. It is usually cheaper, but I was going for a quick cheesy appetizer.

    Don’t be afraid to really pile the cheese into the skillet either. It will melt, bringing the mountain of cheese down to a lake of cheese.

    Notice how I’m using a cast iron skillet. It will go from oven to table in no time flat. I love easy Mexican recipes!

    • Next, stick the skillet into the oven in the broiler on high for 3 minutes.
    • Take out and top with the cooked chorizo and roasted poblano pepper.
    • Return to the broiler for 5 more minutes.

    Queso fundido with chorizo and poblano pepper is a classic Mexican appetizer. The flavors blend together seamlessly.

    I served this dish with tortilla chips, but you can also serve it with bread or water crackers.

    The Wente Morning Fog Chardonnay pairs well with all the Mexican flavors. Cheese and wine, a combination that’s more than fine.

    When you make this, serve immediately and with lots of napkins. Call everyone over for a taste of this ooey gooey cheesy deliciousness. Grab a glass of Wente Wine and savor the flavor!

    Now they know that I didn’t slave for hours and days to make this incredibly tasty dish. Lol.

    Equipment

    • Oven-Safe Skillet (e.g. cast iron skillet)
    Prevent your screen from going dark

    Ingredients

    • ½ 10-ounce package chorizo
    • 8 cups shredded cheese
    • 1 poblano pepper roasted and diced

    Instructions

    • Cook the chorizo in an oven-safe skillet.
    • Remove the cooked chorizo. 
    • Drain excess fat. (This step is very important, or your dish will turn out greasy). 
    • Add all the cheese to the skillet.
    • Place under the broiler on high for 3 minutes. 
    • Top with cooked chorizo and diced poblano pepper. 
    • Place under the broiler on high for 5 more minutes. 
    • Serve immediately with tortilla chips.

      I would also suggest mentioning to garnish with some fresh cilantro (as shown in your picture) as a serving suggestion for follks that like that flavor. Add’s some freshness.

        I like Monterey Jack. Mozzarella works too. Use any cheese that melts well.

      I don’t need a whole lot of convincing to eat queso, but you absolutely sold me with piling the cheese on! This looks so good, and I love a good spicy chorizo. I’ll definitely have to make this soon

      This looks delicious! Can’t wait to throw a simple wine gathering to make this as side food. I always go for guacamole but it would be good to try a different dip for my nachos from time to time.

        I use Monterey Jack for the Queso Fundido, but you can use whatever melting cheese you like. Mozzarella or Queso Oaxaca would work too.
