The inspiration for this recipe comes from Ensalada de Pollo but taken up a notch.

You’re going to love the rich, luxurious sauce. Toss it with shredded chicken to create a creamy and spicy mixture.

Spread on crispy tostadas and enjoy the explosion of flavors!

    🐓 Ingredients

Top view of ingredients for chicken tostadas on a wooden surface: cooked chicken in a patterned dish, cilantro, garlic powder, mayonnaise, red onion, lime, salt, chipotle, tostadas, and avocado.
    • Mayonnaise
    • Chipotle peppers in adobo sauce
    • Limes
    • Salt
    • Garlic powder
    • Chicken breasts, boneless – cooked and shredded
    • Red onion
    • Tostadas
    • Avocados
    • Cilantro

    Swap Out Options

    • Swap out leftover chicken for rotisserie chicken.
    • Not a fan of mayo? Use greek yogurt or sour cream instead.
    • No lime in the fridge? Use lemon instead.

    👩🏼‍🍳 Instructions

A spoonful of creamy peanut butter held above a glass jar, with the interior of the jar also coated in peanut butter. The background features a wooden surface.
    • To a blender, add the mayonnaise, chipotle, lime juice, salt, and garlic powder.
    • Blend until smooth.
    • Taste for salt and heat. Adjust, if needed.

What we’re making here is a basic chipotle mayo sauce but with more lime. You can even make the sauce ahead of time.

    🌶️ Adjusting the Heat

I used 4 chipotle peppers and made a mild sauce.

    • To make it spicier, add another chipotle pepper. Keep blending until you reach your desired spice level.
    • If you are entertaining with this recipe, I highly recommend using fewer chiles (around 4). Someone who likes it spicier can always add more salsa.
A rectangular dish filled with shredded chicken is placed on a wooden surface. Beside it, there is a small round container with creamy yellow sauce. Two metal forks rest in the dish. The dish has a decorative blue rim with dots.
    • Shred chicken.
    • Add shredded chicken and red onion to a large container.

This is a great leftover chicken recipe. Or use rotisserie chicken. We’re going for an easy dinner!

Here is your chance to add veggies. Drain a can of mixed veggies or drain a can of peas and carrots. To use frozen veggies, simply thaw and add to the plate.

A rectangular dish filled with shredded chicken is topped with a creamy sauce. Two forks are placed in the dish for serving. The dish sits on a wooden surface with visible wood grain patterns.
    • Add the chipotle sauce.
    • Mix well.

Consider this filling next time you’re making pinwheels. Spread on flour tortillas, roll up, and slice.

Remember there is mayo in here. Keep refrigerated until ready to serve.

A tostada topped with shredded chicken, cream sauce, and sliced avocado sits on a blue and white patterned plate. A lime half and a dish of rice are in the background on a wooden table.
    • Add 2-3 large tablespoons of the chicken to each tostada.
    • Sprinkle with cilantro and add a few slices of avocado.
    • Serve with extra lime and enjoy!

This recipe is similar to Spicy Chipotle Chicken Pasta and Chicken in Creamy Chipotle Sauce, but this version is cold, not hot. It’s also perfect for feeding a crowd and can be made days in advance.

    🫙 Storing Instructions

    • Store the chicken and the tostadas separately. Place the chicken in an airtight container and keep in the fridge for up to 4 days.
    • When ready to assemble, take out the chicken and add to tostadas. Serve and enjoy!
