You’re going to love the rich, luxurious sauce. Toss it with shredded chicken to create a creamy and spicy mixture.

🐓 Ingredients

- Mayonnaise
- Chipotle peppers in adobo sauce
- Limes
- Salt
- Garlic powder
- Chicken breasts, boneless – cooked and shredded
- Red onion
- Tostadas
- Avocados

Swap Out Options
- Swap out leftover chicken for rotisserie chicken.
- Not a fan of mayo? Use greek yogurt or sour cream instead.
- No lime in the fridge? Use lemon instead.

- To a blender, add the mayonnaise, chipotle, lime juice, salt, and garlic powder.
- Blend until smooth.
- Taste for salt and heat. Adjust, if needed.
What we’re making here is a basic chipotle mayo sauce but with more lime. You can even make the sauce ahead of time.
🌶️ Adjusting the Heat
I used 4 chipotle peppers and made a mild sauce.
- To make it spicier, add another chipotle pepper. Keep blending until you reach your desired spice level.
- If you are entertaining with this recipe, I highly recommend using fewer chiles (around 4). Someone who likes it spicier can always add more salsa.

- Shred chicken.
- Add shredded chicken and red onion to a large container.
This is a great leftover chicken recipe. Or use rotisserie chicken. We’re going for an easy dinner!
Here is your chance to add veggies. Drain a can of mixed veggies or drain a can of peas and carrots. To use frozen veggies, simply thaw and add to the plate.

- Add the chipotle sauce.
- Mix well.
Consider this filling next time you’re making pinwheels. Spread on flour tortillas, roll up, and slice.
Remember there is mayo in here. Keep refrigerated until ready to serve.

- Add 2-3 large tablespoons of the chicken to each tostada.
- Sprinkle with cilantro and add a few slices of avocado.
- Serve with extra lime and enjoy!
This recipe is similar to Spicy Chipotle Chicken Pasta and Chicken in Creamy Chipotle Sauce, but this version is cold, not hot. It’s also perfect for feeding a crowd and can be made days in advance.

🫙 Storing Instructions
- Store the chicken and the tostadas separately. Place the chicken in an airtight container and keep in the fridge for up to 4 days.
- When ready to assemble, take out the chicken and add to tostadas. Serve and enjoy!

Creamy Chipotle Chicken Tostadas
Ingredients
- 2 cups mayonnaise
- 4 chipotle peppers in adobo sauce add more, if desired
- 2 limes (juice only)
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 3 chicken breasts boneless – skin removed, cooked, and shredded
- ½ red onion finely diced
- 8 tostadas
- 2 Avocados sliced
- ¼ bunch Cilantro chopped
Instructions
