    Chicken Mole Nachos are yum, yum, YUM!

    My hubby is from Buffalo and a huge Bills fan. I didn’t know that by marrying him, I was going to adopt a football team.

    Although, I must admit, I love watching a good game and eating all the yummy football food like Ground Beef Taquitos and Frijoles Puercos.

    You’re going to want to print this recipe. For game day, movie night, or easy peasy entertaining, this recipe is a winner!

    How to Make It

    • Add a layer of the chips on a foiled sheet pan.
    • Top with cooked chicken.

    Chicken and mole go together like peanut butter and jelly.

    This recipe is PERFECT for leftover chicken. You can also use a rotisserie chicken and chop it up into small pieces to fit on the chips easily.

    Or, trying cooking frozen chicken in the air fryer.

    For a vegetarian version:

    Omit the chicken, and use sliced mushrooms or pinto beans instead.

    To make the mole sauce:

    • Add the mole paste and chicken broth to a stock pot.
    • Cook until the paste is melted.
    • Add 1 tablet of Mexican chocolate and water.
    • Stir until the chocolate melts.

    In this recipe, we are using pre-made mole paste for simple cooking. Nowadays, there’s even pre-made mole sauce that you can use.

    Also try my grandmother’s easy mole recipe. It’s 100 times easier to make than traditional mole.

    Mexican chocolate is something you can find at virtually any grocery store. If you can’t find the Mexican chocolate, make your own.

    How to Substitute Mexican Chocolate:

    Use a 3-oz bar of dark chocolate and add a pinch of ground cinnamon.

    • Drizzle a layer of mole sauce on top of the chips and chicken.
    • Get the other ingredients ready.

    Please note: Use the mole sauce immediately, or it will thicken up.

    If it does, add a splash of broth (or water) and stir to thin out.

    Do not add too much sauce to the chips. Drizzle enough to add a small amount to each chip. That way it doesn’t overpower the combination of flavors.

    • Add a lot of cheese and slices of red onion.
    • Place under the broiler for 7-10 minutes, or until cheese is melted.

    The more cheese, the CHEESIER your nachos will be.

    Here, this is white cheddar. Feel free to use any cheese that melts well.

    Monterey Jack, Oaxaca, or mozzarella cheeses are a good substitutes.

    • Drizzle the top with sour cream.
    • Add chopped cilantro.

    See how easy that was? You can even entertain with this, but be sure to serve right away. The chips will get soggy if they sit out too long.

    Ingredients

    • ½ 8.25 oz Dona Maria Mole Paste
    • 1 ½ cups chicken broth
    • 1 Mexican chocolate tablet
    • ½ cup water
    • ½ tortilla chips bag
    • 2 cups cooked chicken (diced into 1-inch pieces)
    • 2 cups shredded cheese (Monterey Jack, white cheddar, or mozzarella)
    • ¼ red onion thinly sliced
    • ¼ cup sour cream (optional)
    • chopped cilantro (optional)

    Instructions

    To make the mole sauce:

    • Add half a container of the mole paste and the chicken broth to a stock pot.
    • Bring to a simmer.
    • Stir occasionally until mole paste dissolves.
    • Add water and chocolate tablet.
    • Stir until the chocolate melts.

    To Assemble Nachos:

    • Add foil paper to a large sheet pan.
    • Layer ½ a bag of tortilla chips.
    • Top with cooked chicken.
    • Drizzle the mole sauce over the chicken.
    • Add the cheese and red onion.
    • Place under the broiler for 7-10 minutes, or until cheese is melted.
    • Drizzle sour cream and top with chopped cilantro.
    • Serve immediately.

    Notes
