One of my girlfriends is staying with me for a few weeks. She’s crazy smart and very fit. She’s that girl at the gym who makes all the guys look bad, showing off muscles you didn’t even know existed. Juicing in the morning. It’s hard shoving my face with chips and cake with her around. I have had to get clever in the kitchen and make healthier versions of foods I love. Like this Healthy Waldorf Chicken Salad Sandwich, for example. It’s delicious and HALF the calories. It’s either that, or I’ll have to start hiding brownies in the closet.
Chop. Chop. Chop. Or you can be lazy and get it all pre-chopped at the grocery store, but it costs like a million dollars. So, I’ll just keep chopping. Then put everything into a BIG mixing bowl.
Instead of mayo, I’m using Greek yogurt for the dressing. You know how Greek yogurt has that tanginess to it? Think tangy with sweet grapes and apples… mmm! But you don’t want it to be too tangy. So, I’m also adding some neufchatel cheese. It’ll also make it creamier. You can use cream cheese, but know that it’s going to bring the calories back up. We’re making a HEALTHY Waldorf Chicken Salad Sandwich, after all.
As you can imagine, my friend did not eat the croissant. Yes. Yes. The croissant adds calories, but even with or without the bread, these nutrition facts are pretty awesome! A traditional Waldorf Chicken Salad Sandwich is anywhere from 380-520 calories. My Healthy Waldorf Chicken Salad Sandwich WITH the croissant is only 210. You can almost eat two sandwiches, but I’ll save my extra calories for a brownie. 🙂

Healthy Waldorf Chicken Salad Sandwich
- For Sandwich:
- 2 chicken breasts cooked chopped
- 1 celery finely diced
- 2 green onion green part only, finely diced
- 1 apple diced
- 1/2 cup grapes halved
- 1/2 cup walnuts chopped
- Cilantro as desired (can substitute with parsley)
- Bread of your choice
- For Dressing:
- Juice of 1/2 lime
- 1/2 cup Greek yogurt
- 1 tablespoon neufchatel
- 1 tablespoon fat free milk
- Salt and pepper
- Add all the ingredients for the sandwich in a big bowl.
- In a separate bowl, whisk the ingredients for the dressing until smooth.
- Add dressing to the sandwich ingredients until well combined.
- Put mixture in bread of your choice.
