We eat a lot of hummus around here. When my son refused to eat another stick of carrot with hummus, I nearly fell over. That’s a mother’s worst nightmare, isn’t it? I mean, how else do kids eat veggies nowadays? White Bean and Olive Dip, that’s how. It is very easy to make too. Just add a few ingredients to the food processor, and you have a healthy alternative to hummus that is kid approved.

Even though cannellini beans are famous for their creaminess, I used a can of navy beans. I tend to buy them more, and that’s what I had on hand. Navy beans are perfect for blending because they usually don’t hold their bean shape. Plus, they’re loaded with fiber and are great for your heart.
For a spicy twist a few chiles en vinagre to the blender.
If your store doesn’t carry them, cannellini beans are fine, or try Great Northern beans. Those would work too.
Black olives? Green olives? Doesn’t matter. I like ‘em all. Tangy and yummy. When I was a kid, I would eat an entire bowl of olives all by myself. I guess there are worse things to be addicted to… like bacon!!! (mentally drooling). Olives are a perfect addition to this White Bean and Olive Dip.

I prefer to use a mixture of olives from the self-serve section at the store. However, I have been know to make this with just green manzanilla olives. Serve this at your next party with totopos (Mexican tortilla chips) or pita chips. Your guests will love it!

White Bean and Olive Dip
Ingredients
- 1 can navy beans drained
- 1 large clove garlic
- 1 jar roasted red peppers drained
- juice of half a lemon
- pinch cayenne
- salt and pepper
- 4 tablespoon extra virgin olive oil
- ½ cup mixed olives pitted and roughly chopped
Instructions
- In a food processor, add navy beans, garlic, roasted red peppers, lemon, cayenne, salt and pepper.
- Pulse until well combined.
- While the machine is on, add oil slowly. Process until smooth.
- Transfer to a small bowl.
- Chop up olives and fold into the bean mixture.
- Serve and enjoy.
