    If you are wondering what to serve with enchiladas, look no further! There are several delicious Mexican recipes to serve as side dishes or compliments.

    What I love most about enchiladas is that you can assemble them ahead of time. Then, just pour the sauce – red chile sauce, salsa verde sauce, a cream sauce – and DONE!

    Plus, they are easy on the pocketbook, yummy, and make a great homemade meal any day of the week.

    I make enchiladas for my whole family all the time. Chicken, beef, shrimp … yum! I’m a purest, meaning I believe they should be made with corn tortillas. However, the ones made with flour tortillas are equally delicious.
