    What I love most about enchiladas is that you can assemble them ahead of time. Then, just pour the sauce – red chile sauce, salsa verde sauce, a cream sauce – and DONE!

    Plus, they are easy on the pocketbook, yummy, and make a great homemade meal any day of the week.

    I make enchiladas for my whole family all the time. Chicken, beef, shrimp … yum! I’m a purest, meaning I believe they should be made with corn tortillas. However, the ones made with flour tortillas are equally delicious.

    Today, I’m sharing with you the best sides and compliments to serve with enchiladas regardless of the filling or the sauce. These are all popular Mexican food recipes that have been tried and tested by readers.

    Papas a la Mexicana are tasty Mexican-style potatoes. Made with the colors of the Mexican flag – jalapeno, onion, and tomatoes. Tender potatoes with tons of flavor.

    Chiles Toreados are spicy jalapenos or serranos that are cooked until their skins blistered. They are then seasoned and add heat and flavor to the main dish. Usually grilled but you can do them on the stove too.
