    One Pot Mexican Mac n Cheese

    One Pot Mexican Mac n Cheese

    My Little Red can be particular with food. There are a few things he eats, and there are a lot of things he doesn’t eat. We’ve started to include more spicy foods because he’s fascinated with hot stuff. Like a right of passage for 8-year-olds. Dr. Vogelmann (aka “the hubs”) always cautions me whenever I add jalapeño or chipotle. Thank you, but I know what I’m doing in the kitchen… most of the time. Lol. To get my Little Red to taste new foods, I make them “spicy.” Gives him something to tell his buddies back at school the next day.

    Kraft Mac n Cheese at Sam's Club

    We were at Sam’s Club the other day, shopping away, sampling everything, justifying why we should buy yet another package of 500 envelopes. It’s a family affair, for sure. We each have our sections. The grocery section is my favorite… like you didn’t already know that. 🙂 We bought some KRAFT Macaroni & Cheese Dinner and CAPRI SUN for the picky eater. I don’t know one mom who doesn’t find making quick food essential. Am I right, or am I right? Besides, at $8.98 for 12 boxes of KRAFT Macaroni & Cheese Dinner, makes my wallet and the hubs very happy.

    One Pot Mexican Mac N Cheese

    Back home and back on the mission of feeding the pickiest child in the world, I decided to make an easy… ONE POT… meal for the family. You’re going to love me (not that you don’t already) for my One Pot Mexican Mac n Cheese. I added a little spice for tomorrow’s bragging rights at school. If that’s not you, take out the jalapeño. It’s a dish full of flavor that your family will enjoy.

    One Pot Mexican Mac n Cheese | In Mama Maggie's Kitchen

    One Pot Mexican Mac n Cheese

    Ingredients

    • 1 tablespoon olive oil
    • 1 lb ground beef
    • ¼ onion diced
    • 1 garlic minced
    • 2 tablespoons ground cumin
    • ½ jalapeño finely diced
    • 1 jar of your favorite salsa
    • salt and pepper
    • ½ cup frozen green peas
    • ½ box Kraft Mac n Cheese cooked
    • ½ bunch of cilantro chopped

    Instructions

    • Cook Kraft Mac n Cheese as instructed on the package and set aside. You can also use leftovers.
    • Heat olive oil in skillet.
    • Add ground beef. Salt and pepper. Cook for 4-5 minutes until it’s no longer pink. Drain excess fat.
    • Add onion, garlic, cumin, jalapeño, salsa. Let simmer for 2-3 minutes. Taste for good measure.
    • Add Kraft Mac n Cheese. Combine the mixture.
    • Add green peas. Cook for 1 minute or until no longer frozen.
    • Top with cilantro.
    • Remove from heat and serve.

    Notes

    You can also use mac n cheese leftovers 
    You can make it not spicy.
