    🥣 Ingredients

    • Olive oil
    • Mexican calabazas (zucchini squash)
    • Chayote
    • Celery
    • Carrots
    • Onion
    • Garlic
    • Jalapeño
    • Bay leaf
    • Limes
    • Chicken stock or vegetable stock
    • Salt and pepper
    • Avocado (optional, for topping)

    There are fruits and vegetables in Mexico that you can’t find in the US. If you can’t find some of these Mexican veggies used in this recipe, simply use any variety of vegetables you like.

    👩🏼‍🍳 Step by Step Instructions

    1. In a large stock pot, heat olive oil.
    2. Add the zucchini, chayote, celery, carrots, salt, and pepper. Saute for 3-4 minutes, stirring often.
    3. Mix in the onion and cook for 2 more minutes.
    4. Add garlic, jalapeño, bay leaf, lime juice, and stock. Season with more salt and pepper as needed.
    5. Cover the pot and bring everything to a boil.
    6. Lower the heat and let the soup simmer for 30 minutes.
    7. Serve hot and top with fresh avocado slices and chopped cilantro, if desired.

    Caldo de Verduras vs. Sopa de Verduras

    They mean the exact same thing. “Caldo” and “sopa” are the same words in Spanish. You might also see this soup referred to as “Caldo de Vegetales” which basically means, vegetable soup. Whatever you want to call this Mexican Vegetable Soup is fine by me.

    🫙 Storing Instructions

    Let the soup cool completely before storing. Transfer it to an airtight container and place it in the refrigerator for up to 4 days.


    🔥 Reheating Instructions

    To reheat, warm the soup on the stovetop over medium heat until hot. You can also reheat individual portions in the microwave for about 2 minutes, stirring halfway through. Add a splash of broth or water if needed to thin it out.

    Can I make this soup vegan?

    Yes! Just use vegetable broth instead of chicken broth.

    What vegetables can I substitute?

    Feel free to add green beans, potatoes, corn, or cabbage. This recipe is very flexible and can be adjusted with whatever fresh veggies you have on hand.

    Do I need to add lime juice while cooking?

    You can add lime juice during the cooking process for a tangy flavor or squeeze it in at the end for a fresher taste. Whichever you choose.

    How do I make it spicy?

    Add some diced chipotle peppers or ½ teaspoon of chili powder to the pot. To reduce the heat, use bell pepper instead of jalapenos or a can of diced green chilies.

    Ingredients

    • 2 tablespoons olive oil
    • 4 Mexican calabazas or zucchini squash, diced
    • 1 chayote diced
    • 2 celery stick sliced
    • 2 carrots sliced
    • ½ onion diced
    • 1 garlic finely diced
    • 1 jalapeño finely diced
    • 1 bay leaf
    • Juice of 2 limes
    • 8 cups of chicken broth or vegetable broth
    • Salt and pepper
    • Avocado optional

    Instructions

    • In a large stock pot, heat olive oil.
    • Add squash, chayote, celery, carrot, salt and pepper.
    • Sweat the veggies for 3-4 minutes.
    • Stir frequently.
    • Add the onion.
    • Cook for 2 minutes.
    • Stir frequently.
    • Add garlic, jalapeño, bay leaf, lime juice, stock, and more salt and pepper.
    • Cover and bring to a boil.
    • Reduce heat and let simmer for 30 minutes.
    • Serve and top with avocado.
    • Enjoy!
