    After-School Mexican Cookie Snacks

    You know when you’re Mexican and you want a snack? Well, that’s what happened one day when I could heard my son’s tummy growling. We had just gotten home from school, and he was begging for something to eat. I opened the cupboards and searched through the fridge. Here’s what I came up with. I refer to them as my After-School Mexican Cookie Snacks.

    Galletas Maria take me back to my childhood like that! (snaps fingers) Growing up, we always had them at our house. They aren’t too sweet like most American cookies. Another staple at our house was Queso Fresco. You can also use ricotta or even Queso Panela. When you’re assembling these After-School Mexican Cookie Snacks, squish the cheese down slightly. It helps to keep everything in place.

    Next, top the cookies with diced apple. If you’re not an apple person, you can add other fruit – mango, papaya, even avocado would work. Avocado has a seed, and therefore, considered a fruit. 🙂 Sometimes, I will find that my son didn’t eat his apple for lunch. There must be something in the Mexican gene, but wasting food is a big no-no. Rinse it and add it to your After-School Mexican Cookie Snacks.

    To tie everything together, add a drizzle of honey. These After-School Mexican Cookie Snacks are light and easy to assemble. Just a little something to nibble on til dinner is ready. You’re probably like me and already have these items in your cupboard but never thought of putting them together. Hope you enjoy!

    6 Galletas Maria

    4 tablespoons Queso Fresco

    ½ apple, diced

    Honey

    To assemble, lay out the Galletas Maria individually.

    Add ½ tablespoon of Queso Fresco to each of the cookies.

    Squish the cheese down slightly to keep it in place.

    Top with apple and drizzle with honey.

    Enjoy!

      I love the beauty, simplicity and tastiness of your Mexican cookie snacks! They’re a perfect healthy snack between meals, or for those times when you just need a little something to munch on late in the evening.
