White Chocolate Chip Macadamia Nut Cookies are my favorite. Add a tall glass of milk and a funny sitcom, and it’s a PAR-tay! The problem, though, is that I can’t find them at the grocery store regularly. That might be a good thing because the craving … ugh! Sometimes you just need a bite of soft, sweet, delicious cookies. Drool! When I do find them, they’re way too expensive. Thank goodness for good neighbors.
My neighbor is the sweetest old lady. I helped her out when she was moving in. As a gift, she gave me two containers of macadamia nuts. Bless her heart! She likes to feed me, and I think that’s the nicest thing in the world. I’m not used to getting home and seeing food storage containers of soup sitting on my porch. It’s usually the other way around. People find out I’m a food blogger, and they immediately invite themselves over for dinner. Maybe she doesn’t know. So let’s keep it between us, shall we? In the meantime, I’m enjoying my macadamia nuts.
Don’t these eggs look beautiful? I bought them at the local farmers market from a guy who told me about his crazy chickens. They each had names, but my favorite one was Lolo. Lolo likes to sunbathe for hours. She was really sad when her friend Pepe died last year, but she’s happy again and producing. The chicken farmer’s son had gathered these eggs just that morning, one of which was from Lolo. When I saw these egg beauties, I thought… “You belong in White Chocolate Chip Macadamia Nut Cookies.” Gotta make Lolo proud! 😀 My recipe is your traditional recipe, but if you are looking to lessen the calories to your White Chocolate Chip Macadamia Nut Cookies, you can switch out the 2 eggs for 4 egg whites. Strain them with an egg separator and save the egg yolks for a high protein breakfast. Enjoy!

White Chocolate Chip Macadamia Nut Cookies
Ingredients
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup light brown sugar firmly packed
- 1 cup sugar
- 1 cup butter softened
- 2 eggs or 4 egg whites
- 2 teaspoons pure vanilla extract
- 1 cup coarsely chopped macadamia nuts
- 1 1/2 cups white chocolate chips
Instructions
- Preheat oven to 300°F.
- In medium bowl combine flour, baking soda, and salt. Mix well, set aside.
- In large mixing bowl, blend sugars and butter.
- Add eggs and vanilla.
- Blend until combined.
- Slowly add the flour mixture.
- Then add macadamia nuts and white chocolate chips until combined.
- Don’t overmix.
- Drop by spoonfuls onto ungreased cookie sheet.
- Bake 12 minutes.
