On rainy days, I love turning on the oven and baking something delicious. Warm, soft, and with a cup of tea. Oh yeah! Gimme. Gimme. The problem that I run into is that I don’t feel like working hard in the kitchen on those days. Insert cake box desserts! Whoever invented cake boxes was a genius. Right up there with whomever invented sliced cheese and safety pins. All you have to do is add a little of this and add a little of that, and presto! Food comes out of your oven, and everyone is happy especially with this Lemon Blueberry Cake.
My Little Red always wants something sweet too. He’s kind of funny that way because he knows when and when not to ask. If it’s an easy meal, and he knows I’m not going to be in the kitchen long, he will ask for a dessert . If he hears me talk about how long dinner is going to take, he knows to stay away and hope that there is a cookie box stashed in the pantry. Lemon Blueberry Cake is one of the easiest cake box desserts ever. If he asks… and he eats his salad… this is what I make.
Lemon Blueberry Cake is perfect for a girls night dinner or Sunday brunch. Soft and moist with nothing on top but a little powdered sugar. If you want to add some frosting, go for it. For me, I don’t like desserts that are overly sweet. It’s yummy just as it is. Hope you enjoy!
Lemon Blueberry Cake
- 1 white cake box dessert
- Any ingredients required on the box
- 1 bag frozen blueberries
- 1 lemon - rind and juice
- Powdered sugar
- Pour dry containers of the cake box in a large bowl.
- Add the frozen blueberries and toss to cover.
- Add the ingredients required on the box.
- Add the lemon rind and juice.
- Mix well. Serve batter into well-greased cake pans.
- Bake at temperature and time noted on the package.
- Let cool and top with powdered sugar.
