Glaze Ingredients
- Orange Juice
- Whole Cloves
- Piloncillo
- Chipotle
- Garlic Powder
This glaze is really, really easy to make. It goes great with ham, but try this on chicken or pork as well. INSANELY DELICIOUS!
Here are some swap out options:
- Instead of orange juice, you can also use pineapple juice or apple juice.
- For a sweeter glaze, use an extra piloncillo cone.
- For a spicier glaze, use two chipotle peppers in adobo sauce.
How to Make It
- Add all the glaze ingredients to a small saucepan.
- Cook until the piloncillo is melted.
Piloncillo is Mexico’s version of brown sugar. It is sold in a cones and used in many authentic Mexican recipes like Capirotada, Ponche Navideño, Café de la Olla
Note: You will need to stir occasionally. The piloncillo takes a bit to melt.
There are smaller piloncillo cones. Those do not take as long to melt.
- Score the ham.
- This will create wedges with the spiral slices.
- Add whole cloves in the wedges throughout the ham.
- Brush with the piloncillo chipotle glaze.
Ham is already cooked and ready to eat.
Place in the oven and cook until the internal temperature is 140 F. This can take anywhere from an hour and a half to 3 hours, depending on the size of the ham.
Cooking Times
For a whole 10- to 15-pound ham, cook 18 to 20 minutes per pound.
For a half that weighs 5 to 7 pounds- about 20 minutes per pound.
For a shank or butt portion – 3 to 4 lbs – about 35 minutes to the pound.
Baste ever 20 minutes. Baste while resting. Did you baste? Baste again! This is what will give you that sticky glaze that we all know and love.

- Water in the pan will prevent drippings from burning.
- Baste! Baste! Baste!
How Much Ham to Buy:
Most people do not eat thick slices of ham like they do steak. It’s too salty. Assuming people eat about 5 oz of ham, estimate the following:
- 5 people per 2 lb ham.
- 25 people for 10 lb ham.
What can you make ahead of time?
- Score the ham and make the glaze up to 5 days before your event. Bake and baste the day of.
- Cook and baste the ham up to 3 days before. Day of, reheat covered up with foil so as not to burn the glaze.

- 1 chipotle finely minced
- 1 tspn garlic powder
- 1 8-oz piloncillo cone
- 30 cloves whole
- 1 8-10 lb ham
- 2 cups water
Instructions
- In a stock pot, add the orange juice, chipotle, garlic powder, and piloncillo.
- Stir occasionally until piloncillo melts.
- Preheat the oven at 325 degrees F.
- Score the outside of the ham, cutting about 1/3 of an inch deep.
- This will produce a criss-cut (or a diamond) effect on the spiral ham.
- Add cloves throughout the ham in the center of the diamond cuts.
- Brush the ham with the glaze.
- Add water to the pan to prevent the drippings from burning.
- Place the ham on top of the roasting pan.
- For a whole 10- to 15-pound ham, cook 18 to 20 minutes per pound.
- Baste every 20 minutes.
- Once it reaches an internal temperature of 140 degrees F, remove from the oven.
- Baste again and cool slightly before serving.
