Coating diced potatoes with oil and spices.

    👩🏼‍🍳 Pro Tips:

    • Cooking Mexican style potatoes in an air fryer will give you a crispy texture, which can be a healthier alternative to frying. Cook at 400˚F for 18-20 minutes, flipping and tossing halfway.
    • Serve these breakfast potatoes with breakfast burritos for a great start to your day.
    • This authentic Mexican recipe can serve as a full meal. Just serve them with warm corn tortillas, add a little queso fresco, and you’re good to go.
    • Store leftovers in an airtight container. Reheat and consume within 4 days.

    🙋🏻‍♀️ Frequently Asked Questions

Are potatoes used in Mexican cuisine?

Yes, potatoes are widely used in Mexican cuisine. They are often incorporated into dishes like tacos, picadillos (a type of hash), and various stews and soups. Potatoes can also be found in some traditional Mexican breakfast dishes and are sometimes used as a filling for tamales, gorditas, and enchiladas.

Does soaking potatoes make them crispier?

If you have time to soak the potatoes, do it! It’ll remove some of the starch, making them even crispier. Soak in water for 20-30 minutes. Drain water and pat dry well.

Why aren’t my potatoes getting crispy?

If your potatoes need to get crispy, consider these factors: moisture level, overcrowding the pan, low oven temperature, the type of potato used, insufficient oil, and cooking time. For the best potatoes, dry them well, space them on the baking sheet in an even layer, use a hot oven, choose starchier potatoes, coat them lightly but evenly in oil, and consider extending the cooking time for better crispiness.

These turned out well. Great texture and flavor. I think I’ll add a bit of chili powder on them next time.
