    The other day, my Little Red and I were in the car driving, and I heard him say, “I’m starving.” Had it been any adult – the neighbor, a friend, even my husband – I would’ve brushed it off. As a mother, though, those words pierced my heart right to the very core. Maybe it also has to do with the fact that I’m Mexican. My mother would have sold her only pair of shoes to feed us. Sure, he would’ve lived long enough until we got home, but no. Instead, I stopped at the local Sprouts for snacks and ingredients to make Jalapeño Bacon Mac n Cheese.

    My son likes spicy food. What can I say? The kid takes after his mama. 😉 I jazzed up Annie’s Macaroni and Cheese and made some Jalapeño Bacon Mac n Cheese. It’s mildly spicy and tastes SO good. It’s on sale right now during the Better For You at Sprouts during October 12 – October 19th. You can save 35% at Sprouts on select items by Annie’s Larabar, Cascadian Farms Organic, Found Should Taste Good, Immaculate, Epic, Mountain High, and Muir Glen Organics that are wholesome and great for the entire family. Having a well-stocked pantry is essential when feeding hungry people. Gotta say, we are big fans of Annie’s at my house. Best to buy now!

    I’m adding just half of one jalapeño. Finely diced, of course. You don’t want to hurt anyone. Just enough to give it that yummy jalapeño flavor. Forget the Hokey Pokey. Bold, strong flavors. That’s what I’m all about.

    Do you have leftover bacon from breakfast? Yeah, neither do I. Luckily, it cooks up fast. These are only 3 bacon slices. You can add more if you like, but I find three is JUST RIGHT to make this Jalapeño Bacon Mac n Cheese.

    Annie's Macaroni and Cheese

    Cook Annie’s Macaroni and Cheese as directed. Now here’s the part that you have to add. It says on the box that butter is optional. In my recipe, you must add the butter and the jalapeño to the pot and stir over medium heat. Then turn it off and add the remaining ingredients. Mix with the cooked mac and cheese. Lastly, add the bacon and mix well. It’s a quick way to get your family together at the dinner table. Plus, they will love this delicious Jalapeño Bacon Mac n Cheese. Enjoy!

    Ingredients

    • 1 box of Annie’s Macaroni and Cheese
    • ½ Jalapeño finely diced
    • 3 strips of bacon chopped and cooked
    • 2 tablespoons butter
    • 3 tablespoons milk
    • Cheese from Annie’s package

    Instructions

    • Cook Annie’s Macaroni and Cheese as instructed.
    • In the meantime, finely dice Jalapeño and cook bacon.
    • Drain the macaroni.
    • Add butter and Jalapeño to the macaroni pan and cook for 1 minute over medium heat.
    • Turn of the heat.
    • Add milk and cheese. Stir to combine.
    • Add cooked pasta.
    • Add bacon. Mix well.
    • Enjoy.

    Notes
