    The rich, savory tomato sauce is loaded with FLAVOR.

    My son loves pork chops, and I am always looking for new recipes, new ways to please his picky palate.

    How to Make It


    Above are the ingredients you need to make this recipe. Only thing missing is ¼ cup water.

    Any time you see a dish with the words “a la mexicana” in the title, they are referring to three ingredients.

    • Jalapeno (or serrano peppers)
    • Tomatoes
    • Onion

    Green, white, and red colors like the Mexican flag.

    One way to make this recipe faster is to use premade Pico de Gallo.

    • Rinse and pat dry the pork chops.
    • Season the pork chops with salt, pepper, oregano, and cumin.

    Pat drying the pork chops will give your meat a good sear. This will really lock in the flavors.

    The best thing about using pork chops, you can always find them at the grocery store. This cut of pork was made for family meals.

    • Sear the chops on both sides.
    • About 4-5 minutes on each side.

    Don’t skip this step. It adds TONS of flavor to your final dish.

    Pork chops come from pork loin which is the leanest part of the pig.

    You can even get an entire pork loin and break it down into individual cuts. Put the different cuts into multiple meals. Talk about a HUGE value!

    • Remove the pork chops from the skillet and set aside.
    • Add the tomatoes, onion, and jalapeno to the skillet.
    • Cook for 2-3 minutes.

    We are making this in a regular skillet, but try using boneless pork chops or boneless pork loin and adding the “a la mexicana” ingredients into a slow cooker.

    Slow Cooker Cooking Instructions:


    6 hours on High.
    8 hours on Low.

    The end result will be tender meat and a savory tomato sauce. YUM!

    • Once the tomato mixture starts to thicken up.
    • Add the water.
    • Stir to combine and bring to simmer.

    Wait til you taste this sauce! It’ll transport you to a beautiful Mexican town and fulfill your wanderlust desires.

    • Return the pork to the skillet.
    • Cover and cook for 15-20 minutes, or until pork is fully cooked.

    Cooked Pork Temperature: ranges from 145 to 160 degrees F, depending on the cut of pork. Pork chops should be cooked to a minimum temperature of 145 degrees F followed by a three minute rest.

    Ingredients

    • 4 pork chops bone-in
    • 1 tablespoon salt
    • ½ teaspoon ground pepper
    • ⅛ teaspoon ground cumin
    • ⅛ teaspoon ground oregano
    • 2 tablespoon olive oil
    • 2 tomatoes diced
    • ¼ onion diced
    • 1 garlic clove diced
    • 1 serrano pepper finely minced
    • ¼ cup water

    Instructions

    • Rinse and pat dry the pork chops.
    • Season both sides with salt, pepper, cumin, and oregano.
    • Heat oil in a large skillet.
    • Sear the pork chops on all sides.
    • About 4-5 minutes on each side.
    • Remove from the skillet.
    • Add the tomatoes, onion, and serrano pepper.
    • Cook for 2-3 minutes.
    • Stir occasionally.
    • Add the water and mix to combine.
    • Return the pork chops to the skillet.
    • Cover and cook for 15-20 minutes, or until pork is fully cooked.

    Notes

    Instead of a serrrano pepper, you can also use a jalapeno.

      I made this last night with boneless pork chops and poblano peppers (what I had) in a large skillet. It was simple to make and the flavors went together so well. I served the chops with rice with the the sauce spooned over it. So delicious. Well definitely make again.

        I am a firm believer in using what you have if you don’t have the right things in the pantry. I was completely out of any type of pepper so for heat? I used chili flakes. Before adding the onions and tomatoes? I deglazed the pan with some white wine and instead of water? I used some chicken broth. Served with rice and added sliced avocado on top. Wow…amazing flavor!

      @Maggie- I used my instapot to make this recipe. I sautéed the pork chops once they were seasoned in the pot and removed them after they were nice and brown and then added purple onions, serrano pepper, and minced garlic cooked them for a bit till they were soft then added the canned diced tomatoes topped with the pork chops. I pressure cooked them for 50 min and did a quick release. And Voila!!!!!! Delicious recipe.

        I’ve never used Rotel tomatoes. I’ve seen them at the store though. I don’t know if they are spicy or just plain. Sorry, wish I could be more help.

      Pork chops are my go to dinner recipe lately but I need to mix it up more with different ingredients. The Mexican spices will be perfect to try with a baked potato along side the chops next.

          Made this last night and it was delious. The only thing I added a 1/2 teaspoon Chipotle powder. I used fresh Hatch chipotle. We were a little bored with grilled pork chops and this recipe really changed things up. It’s a true keeper. I served it with cilantro lime rice and corn on the cob.
