    Pineapple Peach Mango Martini

    It’s Easter time! Things have changed a lot since I was a kid and celebrating Easter. I grew up with two wonderful parents who are not Americans. Our Mexican traditions are mainly based on Catholicism. I remember distinctly celebrating morning mass on Ash Wednesday, making capirotada on Fridays, Good Friday service, and of course, our yummy Easter feast.

    It was usually something like barbacoa or tinga. Something spicy that was left on the stove for hours to develop depth, flavor, and tenderness. I can almost smell my mom’s house as I write this… Nowadays, if I’m lucky enough to enjoy my mother’s food, I ask for her enchiladas, but let me tell you… her barbacoa… DROOOL! Es tan delicioso, para chuparse los dedos.

    Today, our Easter feast still include my mother’s food, but we now have a ham. I’ll have to take a picture of my plate this Easter Sunday. Americans might get a kick out of it – you’ll see a spicy dish with tortillas and salsa and a slice of ham and maybe some biscuits. Not really what you might expect. Somehow, for my family, it all works. Being bicultural is the best of both food worlds.

    When I received this box of goodies from BevMo the other day, I thought of making a fun cocktail to go with our ham and spicy dinner. Pineapple ham is delicious, and this Pineapple Peach Mango Martini is a perfect compliment. Now tell me that doesn’t sound good?

    Pineapple Peach Mango Martini

    Ingredients:
    ¼ cup Pinnacle peach-flavored vodka
    ¼ cup mango juice
    ½ cup pineapple juice
    ice

    Making a martini

    Directions:
    Put ice in the container and pour in the remaining ingredients. Shake. Shake. Shake. Pour into a martini glass. Enjoy!
