Pumpkin. Yes please! I discovered pumpkin late in life. We didn’t make pumpkin pie in Mexico. We have candied pumpkin, though!!! More on that later…. In the meantime, I have some catching up to do.
This is a difficult time for my diabetic and health nut friends and family. Running. Cross fit. Yoga. Pilates. Then on top of that, you have to count calories or points. Seriously, that’s just way too much work. If you are one of those lucky people who can eat everything and not gain a pound, then I might need to unfriend you. Healthy Pumpkin Cookies will save our friendship. Not only that, but I can give them to my Little Red and know they are not loaded with tons of sugar.
I added a few chocolate chips to one of the batches. Soooo yummy! If you add chocolate chips to the Healthy Pumpkin Cookies recipe, have no fear. They are still low calorie, still healthy, and I didn’t feel guilty eating them whatsoever. If you want to keep the calories as low as possible, don’t use the chocolate chips. BTW, chocolate chips make a great little snack all on their own… just saying. 🙂
I used flaxseed in my recipe because it’s good for you. It helps prevent cancer, stroke, and diabetes. It has omega-3 essential fatty acids, lignans, and fiber. I prefer it in liquid form, but my Little Red won’t touch it. If I sneak it into my Healthy Pumpkin Cookies, however, he doesn’t complain at all. You can add more than just 1 tablespoon of flaxseed, but you will notice it in the texture of the pumpkin cookie. Flaxseed is a “seed” after all, or you can use the ground kind. It won’t effect the taste if you add one more tablespoon, but I don’t suggest anything more than that. If you don’t have any, omit it. Your pumpkin cookies will still be fabulous!

Healthy Pumpkin Cookies
Ingredients
- ½ c applesauce
- 1 can pumpkin puree
- 1 teaspoon vanilla
- ⅛ teaspoon salt
- ⅛ teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 cup white flour
- 1 cup wheat flour
- 1 cup sugar
- 1 tablespoon flaxseed
- 1 teaspoon baking soda
- 1 teaspoon baking powder
Instructions
- Preheat oven 375 degrees Fahrenheit.
- In a big bowl, mix the applesauce, pumpkin, and vanilla.
- In a separate bowl, mix all the remaining ingredients. Stir to combine.
- Now mix the pumpkin mixture with the dry ingredients very slowly. Mix well until fully combined.
- Drop on a greased cookie sheet. Bake 10-12 minutes.

Always need something healthy and yummy to make with pumpkin! Thanks so much and looks so incredibly easy, my kids can definitely help put this together. I like throwing it a bit of flax seed and other healthful grains in too! You probably know this already, but sometimes sub 1 T flax & 3 T water = for one egg can work out. Sometimes not, but works for pancakes for us!
