In a bowl, combine the room temperature ingredients: white and brown sugar, softened butter, and peanut butter.
Add the egg and mix until well combined.
In another bowl, combine the flour, baking powder, and salt.
Fold the dry mixture into wet ingredients. Continue mixing until smooth.
Using a dough scoop, form rounds, weighing about 1 ⅓ ounces. You will get 10 balls.
Line a baking sheet with parchment paper.
Roll each ball in red sugar and place them on the parchment, spacing them apart.
Bake at 350°F for about 10 minutes
Remove the baking sheet from the oven, press chocolate candy into the center of the warm cookies.
Transfer them to a serving plate. Let them cool slightly before enjoying.
