Snowman Truffles are the perfect make-ahead winter treat—sweet, creamy, and covered in coconut “snow.” A cute Christmas dessert for all ages!

- 8 oz Gingerbread cookies (substitute with: graham crackers or vanilla wafers)
- 4 oz Cream cheese softened
- 10 oz White chocolate
- ⅓ cup Coconut flakes
- Red icing
- 1 tablespoon Dark chocolate
Add crushed cookie crumbs and cream cheese to a bowl.
Stir until well mixed.
Form balls of two different sizes, thread onto wooden skewers and chill in the freezer for half an hour.
Each skewer should have 2 balls - one smaller and one larger.
Dip in melted chocolate.
Draw eyes with dark chocolate, buttons, nose with red icing. If desired, tie a gummy scarf.
Sprinkle with coconut flakes for the "snow."
