  • Wash, peel, and dice the potatoes.
  • Heat oil in a large skillet.
  • Add the potatoes.
  • Cook for 5 minutes, stirring occasionally.
  • Add the water.
  • Place a lid over the skillet.
  • Cook for 5 minutes.
  • Remove lid and add onion.
  • Cook for 1 minute.
  • Meanwhile, mix the eggs, salt, and pepper.
  • Add the egg mixture to the skillet.
  • Stir to combine.
  • Cook for 3-4 minutes, or until eggs are fully cooked.
  • Stir occasionally so the eggs won't burn or stick to skillet.
  • Serve and enjoy!

Notes

Pro Tips
  • Check the potatoes. If they are not fully cooked, add ONLY a splash of water. Cover and let the steam finish the cooking.
  • The bigger the potatoes, the longer they take to cook. The smaller the potatoes, the less time needed for them to cook.  
  • For a cast iron skillet, par boil potatoes by cooking them slightly in another pot then transfer to the skillet.
  • To use leftover potatoes, cook for 2 minute before adding the rest of the ingredients.
This is a basic recipe. You can also add diced jalapeno, diced tomatoes, and cheese.
