You start dicing the portobello mushrooms. The texture of the mushrooms resembles meat.

The mushrooms in this recipe soak up the red salsa flavor. I personally like to make my own salsa, but you can buy salsa already made. (Affiliate)
In a large skillet, heat olive oil. Add mushrooms, tomato, onion, garlic, salt and pepper, and red salsa. Cover and cook. Meanwhile, warm up the tortillas.
To assemble, add the mushroom mixture to the center of the tortilla. Top with salsa, cheese (if using), and cilantro. Enjoy!
