Rinse the raw shrimp and pat dry with a paper towel. In a large bowl, sprinkle with cumin, oregano, cayenne (if using), chili powder, salt, and pepper. Mix well, until the shrimp are completely covered.
In a large skillet, heat olive oil and add the shrimp. Cook and turn with your tongs. Add the peppers, onion, and garlic to the hot pan. Cook until the peppers are soft.
Once everything is cooked, warm flour tortillas on a hot griddle.
To assemble, add some of the juicy shrimp mixture and top of warm tortillas with a generous amount of your favorite toppings.
