Drain the artichoke can. Discard the liquid.
Roast the garlic in the broiler or in the oven until soft.
In a food processor, add all the ingredients and pulse until completely combined.
I served this with a sliced baguette, but you can do the healthy options like carrots, celery, red peppers, etc.
