Yellow cake mix (plus ingredients on the package directions) Pumpkin pie spice Pumpkin purée Powdered sugar Cajeta or dulce de leche Cream cheese softened Butter softened Ground cinnamon Vanilla Heavy whipping cream
Prepare the cake mix as directed, but include the pumpkin pie spice and substitute the can of pumpkin purée for the water called for in the cake box directions. Divide the batter evenly into the prepared muffin tins and bake until the toothpick inserted into the center of a cupcake comes out clean.
In the meantime, in a medium-size mixing bowl, whip the cream cheese, cajeta, butter, vanilla, and cinnamon. Whip until everything is well blended. Add the powdered sugar and whipping cream, little by little. Then, beat until fluffy.
