Pescado Empapelado

INGREDIENTS

Butter softened Fish Carrot Calabacitas Onion Tomatoes Garlic Jalapeño Cilantro chopped Lime juice Salt Whole oregano Foil paper

Lay out a large piece of foil paper. To the center, brush butter, not touching the sides. Add fish to the center and slice the carrots.

Slice the calabacitas and top the fish with desired amounts of carrot, calabacitas, onion, tomatoes, garlic, and jalapeno.

Now, this ingredient is completely optional. If you don’t like it spicy, omit.

Sliced jalapeño is optional

I’m using fresh tilapia. The fresher, the better. You can use whatever fish you have on hand.

Assemble the Fish

Fold the center and the sides of the foil paper in. Fold in each end, creating a packet.

Place on the stove in a large skillet. Or, place it in a 375 degrees F oven or grill.

Cook the fish

You can serve with Mexican rice, corn, Refried Beans, and potato. Don’t forget the your favorite salsa.
