Oven Mexican Baked Potatoes


Potatoes Olive oil Salt Ground pepper Ground cumin Ground oregano Garlic powder Olive oil for baking sheet


Preheat the oven to 400 degrees F. Wash and scrub the potatoes well. Dice the potatoes.

Dice the potatoes


Add the oil and spices. Toss to coat.

Season the potatoes


Brush oil on a baking sheet. Spread the potatoes out evenly in a single layer on the sheet pan. Bake at high heat, then flip and bake, until soft and crispy.



This recipe is a perfect match for any meat, or you can serve it as a full meal too. Just serve them with warm corn tortillas, add a little queso fresco, and you’re good to go.
