Mexican Molletes

INGREDIENTS

Bolillo or bread Refried beans Shredded cheese Tomatoes Onion Limes Jalapeño Salt Cilantro

Smear the refried beans

Start by cutting the bolillo in half and smear a thin layer of refried beans.

Add a lot of cheese, yum!

Add shredded cheese and place the molletes under the broiler until the cheese has melted.

Prepare Pico de Gallo

Chop the tomato, jalapeño and onion. Place them in a large bowl.Then squeeze the juice from the limes and set it aside.

Mix ingredients

To the chopped vegetables add lime juice, chopped cilantro, and salt.  Mix to combine.

And we're done!

You can add chorizo, minced chipotle, scrambled eggs for breakfast, and even chopped-up carne asada. Yum!
